Coconut Pandan Smoothie Bowl
Why this recipe works
- Fast to make: The base comes together in a blender, with only a quick toast for the coconut topping.
- Thick and creamy: Coconut milk, ripe banana and ice create a cold, spoonable texture without dairy.
- Fresh contrast: Soft mango and crisp toasted coconut add contrast to the smooth pandan-coconut base.

Ingredient notes
- Pandan: Fresh or frozen pandan leaves give the bowl its recognisable aroma; discard tough ends so they blend more easily.
- Use ripe fruit: Ripe banana and mango provide natural sweetness and help the base blend thick and smooth.
- Shake the coconut milk: Well-shaken coconut milk blends more evenly, especially if the cream has separated in the tin.
Texture tips
- For a thicker bowl: Blend briefly at first, then increase the speed once the ice has started to break down.
- For a smoother finish: If pandan fibres remain, keep blending until the base is completely smooth.
Timing notes
- Serve immediately: The bowl is best eaten straight away while cold, thick and spoonable.
- Best fresh: It can be chilled briefly if needed, but the texture is freshest just after blending.
Serving ideas
- Extra toppings: Add more fresh mango or a little extra toasted coconut for a fuller breakfast bowl.
- Tea pairing: Serve with jasmine tea or green tea for a light, aromatic breakfast.

Ingredients
Instructions
- Toast the coconut flakes in a dry frying pan over a medium heat for 2 to 4 minutes, stirring, until lightly golden and fragrant. Tip into a bowl to cool.
- Trim the pandan leaves into short lengths so they blend easily, discarding any tough ends. Peel the bananas, then cut the mango flesh away from the stone; set aside about a third of the mango for topping.
- Add the coconut milk, pandan leaves, bananas, the remaining mango and the ice cubes to a blender. Blend until very thick, cold and completely smooth, scraping down as needed.
- Divide between two bowls and top with the reserved mango and toasted coconut flakes. Serve immediately while it is cold and spoonable.
Recipe notes
Tips
- For the thickest, spoonable bowl, use very ripe bananas and start with a short blend, then increase speed only once the ice is broken down.
- If any pandan fibres remain, keep blending for another 30 to 60 seconds until fully smooth.
Substitutions
- Replace Coconut milk with Coconut milk beverage for a lighter bowl; it will be less thick so reduce the Ice cubes slightly.
- Replace Coconut flakes with Desiccated coconut for a finer, more even toasted topping.
Storage
- Best eaten straight away. If needed, refrigerate for up to 2 hours, then re-blend briefly with a few Ice cubes to restore a spoonable texture.
