Southern-Style Quinoa Grain Bowl with Black Beans and Avocado
Why this recipe works
- Bright, balanced dressing: Lime zest, lime juice and hot sauce cut through the richness of the avocado and lift the beans and greens.
- Good texture contrast: Fluffy quinoa, creamy avocado, tender greens and plump black beans make the bowl feel filling without becoming heavy.
- Fast lunch-friendly cooking: The quinoa rests while the greens, beans and corn cook, keeping the whole bowl efficient and easy to assemble.

Adjust the heat
- For less heat: Use a smaller amount of hot sauce in the dressing, then let each person add more at the table.
- For more heat: Choose a sharper hot sauce or add extra just before serving so the heat stays bright and fresh.
Make-ahead tips
- Keep the fresh elements separate: Store the quinoa, beans, corn and greens together, but keep the dressing and avocado separate until serving.
- Reheat gently: Warm the grain and bean base with a splash of water so the quinoa loosens without drying out.
Ingredient notes
- Choose firm-ripe avocado: A ripe but firm avocado slices cleanly and adds creaminess without collapsing into the warm bowl.
- Strip tough collard stems: Removing the thicker stems helps the greens cook quickly and keeps the texture tender rather than fibrous.

Ingredients
Instructions
- Rinse the quinoa in a colander, then tip into a saucepan with 350 ml water and 0.5 tsp of the fine sea salt. Bring to the boil, cover, then simmer gently for 12 minutes until the water is absorbed. Take off the heat and leave covered for 5 minutes, then fluff with a fork.
- Meanwhile, peel and finely grate the garlic. Strip any tough stems from the collard greens, then slice the leaves into ribbons.
- Heat 1 tbsp of the extra virgin olive oil in a large frying pan over a medium heat. Add the garlic and cook for 30 seconds until fragrant, then add the collard greens, ground cumin and the remaining 0.5 tsp fine sea salt. Sauté for 3 to 5 minutes until the greens are tender and glossy.
- Drain and rinse the black beans, then add them to the pan with the sweet corn kernels. Cook for 2 to 3 minutes, stirring, until everything is warmed through.
- Finely grate the lime zest into a mixing bowl, then squeeze in the juice. Whisk in the remaining 1 tbsp extra virgin olive oil and the hot sauce to make a tangy dressing.
- Halve the avocado, remove the stone, then peel and slice. Divide the warm quinoa between two bowls, spoon over the beans, corn and greens, then drizzle with the dressing. Top with the avocado and serve straight away.
Recipe notes
Tips
- For fluffier quinoa, keep the lid on during the 5-minute rest, then fork through gently rather than stirring.
- If you are sensitive to heat, start with 1 tsp hot sauce and add more at the table.
- Food safety: if serving to vulnerable groups, wash the collard greens thoroughly and keep the bowl hot until serving.
Substitutions
- Replace quinoa with brown rice for a heartier bowl; cook it separately until tender before assembling.
- Replace collard greens with kale, cooking it for an extra 1 to 2 minutes if it is tough.
- Replace hot sauce with sriracha for a thicker, slightly sweeter heat.
Storage
- Refrigerate up to 2 days
- Store the quinoa, beans, corn and greens together in an airtight container; keep the avocado and dressing separate. Reheat the base in a saucepan with a splash of water over a low heat, or in the microwave until piping hot, then add the dressing and avocado just before serving.
