Merluza en Salsa Verde (Hake in Parsley and Garlic Green Sauce)
Why this recipe works
- Light but layered flavour: Garlic, parsley, dry white wine and fish stock create a savoury green sauce that supports the hake without overpowering it.
- Clean, balanced finish: White wine and lemon keep the olive-oil-based sauce bright, while the clams add natural salinity and depth.
- Gentle poaching: Cooking the hake in a barely simmering sauce helps the lean fillets stay moist, tender and flaky.

Authenticity notes
- Basque-style salsa verde: In Spanish seafood cooking, salsa verde usually refers to a parsley-and-garlic sauce, distinct from Mexican tomatillo salsa verde.
- Clams are a natural addition: Adding clams to hake in green sauce is a common variation that brings briny flavour and turns the dish into a fuller seafood main.
- A restrained sauce: The sauce should be light and glossy rather than creamy, thickened just enough to coat the fish.
Ingredient notes
- Check the clams carefully: Use live clams that are tightly closed, discarding any that are cracked or stay open when tapped; after cooking, discard any that remain closed.
- Choose even fillets: Hake is delicate and lean, so similarly sized pieces help the fish poach evenly.
- Season at the end: Add lemon after cooking and taste before adjusting the salt, as the stock and clams can already be savoury.
Texture tips
- Keep the poach gentle: Once the hake goes in, the sauce should barely tremble; boiling can make the fish firm and dry.
- If the sauce is too loose: Simmer it uncovered briefly before adding the fish, so the fillets are not overcooked while the sauce reduces.
- If the sauce is too thick: Loosen it with a little fish stock until it lightly coats the spoon.
Ingredient swaps
- Without wine: Replace the wine with extra fish stock, then use lemon at the end to bring back brightness.
- Using cod instead: Cod can replace hake; keep the heat gentle and allow a little extra time if the pieces are thicker.
- Changing the herb: Fresh coriander gives a different, less traditional green sauce while keeping the dish herb-forward.

Ingredients
Instructions
- Pick the parsley leaves and finely chop them. Finely slice the garlic. Rinse the clams well under cold running water, discarding any that are cracked or stay open when tapped.
- Warm the olive oil in a large frying pan over a low heat. Add the garlic and cook for 1 minute until fragrant but not coloured. Stir in the flour and cook for 1 minute to remove the raw taste.
- Pour in the wine and whisk until smooth. Add the fish stock, salt and black pepper, then bring to a gentle simmer. Cook for 3 to 4 minutes, stirring, until lightly thickened.
- Stir in most of the parsley, reserving a little to finish. Add the clams, cover, and cook over a medium heat for 4 to 6 minutes, shaking the pan occasionally, until the clams open. Lift out the clams with a slotted spoon and keep warm; discard any that remain closed.
- Lower the heat so the sauce barely trembles. Nestle the hake into the sauce in a single layer, cover, and poach gently for 6 to 8 minutes until the fish is opaque and flakes easily. Spoon the sauce over the fish once or twice as it cooks.
- Return the clams to the pan to warm through for 1 minute. Squeeze in a little lemon juice to taste and scatter over the reserved parsley. Serve straight away, spooning plenty of green sauce over each portion.
Recipe notes
Tips
- Keep the heat gentle once the fish goes in; a quiet poach keeps the hake moist and stops the sauce splitting.
- If the sauce looks too thick, loosen it with a splash of fish stock; if it looks thin, simmer uncovered for 1 to 2 minutes before adding the fish.
- Shellfish and fish should be cooked and served hot; if you are pregnant, elderly, or immunocompromised, make sure the clams are fully opened and the fish is piping hot throughout.
Substitutions
- Replace Dry White Wine with extra Fish stock for an alcohol-free version.
- Replace Fresh parsley with Fresh coriander for a different but still herb-forward sauce.
- Replace Hake fillet with Cod fillet, keeping the poaching gentle and adjusting the time if the pieces are thicker.
Storage
- Refrigerate up to 2 days
- Cool quickly, then refrigerate in a sealed container. Reheat gently in a covered pan over a low heat with a splash of Fish stock until piping hot; avoid boiling to keep the fish tender. Discard any leftover clams that did not open during cooking.
