Moules Marinières (Mussels in White Wine)
Why this recipe works
- Fast cooking: Mussels steam open in minutes, making this a very quick seafood dish once they are cleaned.
- Simple, aromatic broth: Shallot, garlic, dry white wine, butter and parsley create a savoury broth without heavy seasoning.
- Classic steaming method: Cooking the mussels covered traps steam quickly, opening the shells while keeping the meat tender.

Ingredient notes
- Choose live mussels: Use fresh, live mussels with intact shells. Discard any that are cracked or do not close when tapped before cooking.
- Use a dry white wine: A crisp, dry wine keeps the broth bright and savoury rather than sweet.
- Clean just before cooking: Scrub away grit and pull off any beards shortly before steaming so the mussels stay fresh.
Timing notes
- Serve straight away: Moules marinières are best eaten as soon as the shells open and the broth is hot.
- Cleaning takes longer than cooking: Most of the active time is spent checking and cleaning the mussels; the steaming itself is very quick.
- Best the day it is cooked: The texture is most tender when freshly steamed rather than reheated.
Common mistakes
- Do not overcook: Once the mussels have opened, take them off the heat; prolonged cooking can make them tough.
- Keep the steam lively: A strong simmer helps the mussels open quickly and evenly instead of sitting too long in the pot.
- Handle leftovers carefully: Chill cooked mussels promptly and reheat gently only until piping hot.
Serving ideas
- Serve with bread or fries: Crusty bread or crisp fries are ideal for catching the buttery wine broth.
- Finish with lemon and parsley: A squeeze of lemon and fresh parsley sharpen the broth just before serving.

Ingredients
Instructions
- Rinse the mussels in a colander under cold running water, scrubbing any grit and pulling off any beards. Discard any that are cracked or that do not close when tapped.
- Finely chop the shallots, and finely chop the garlic. Roughly chop the parsley and cut the lemon into wedges.
- Melt the butter in a large pot over medium heat. Add the shallots and cook for 2 minutes until softened but not coloured, then stir in the garlic for 30 seconds until fragrant.
- Pour in the white wine and add the black pepper. Bring to a lively simmer.
- Tip in the mussels, cover with a lid, and steam for 3 to 5 minutes, shaking the pot once or twice, until the mussels have opened. Discard any that remain closed.
- Stir through most of the parsley and squeeze in a little lemon juice to taste, then toss to coat the mussels in the broth. Serve straight away with the remaining parsley scattered over and lemon wedges alongside.
Recipe notes
Tips
- Keep the heat fairly high once the mussels go in so they steam quickly; overcooking makes them tough.
- If you are pregnant, elderly, immunocompromised, or serving young children, ensure the mussels are thoroughly cooked and discard any that do not open.
Substitutions
- Replace Dry White Wine with a dry sparkling wine for a slightly brighter, more celebratory broth.
- Replace Fresh parsley with fresh dill for a softer, more aromatic finish.
Storage
- Refrigerate up to 1 days
- Best eaten immediately. If you have leftovers, remove the mussels from their shells, chill promptly, and refrigerate; reheat gently in a covered pot just until piping hot, as prolonged reheating will toughen them.
