Kluski z Makiem (Polish Egg Noodles with Sweet Poppy Seeds)
Why this recipe works
- Softened poppy seeds: Simmering the poppy seeds first gives them a softer texture and helps them blend more evenly through the noodles.
- Sweet, nutty depth: Honey, orange zest, dried fruit and walnuts build a rounded sweetness rather than a flat sugary finish.
- Flexible serving: The dish works gently warmed or at room temperature, which makes it useful for festive meals with several dishes on the table.

Ingredient notes
- Drain the poppy seeds thoroughly: After simmering, press the poppy seeds well in the colander so the finished mixture stays rich and glossy rather than watery.
- Plump the dried fruit: Soaking the raisins and apricots softens their texture and helps them fold through the noodles without feeling tough or dry.
- Choose the nuts to suit the dish: Walnuts give a slightly earthy crunch, while almonds make the flavour milder and sweeter.
Timing notes
- Use the simmering time well: While the poppy seeds soften, prepare the dried fruit, chop the nuts and cook the noodles so the final assembly is quick.
- Serve warm or at room temperature: The dish does not need to be piping hot; gentle warmth keeps the noodles tender and preserves the honeyed aroma.
Make-ahead tips
- Make ahead for easier serving: Kluski z makiem can be made in advance, cooled completely and refrigerated in a sealed container.
- Reheat gently: Warm it slowly over a low heat, stirring often and adding a small knob of butter if needed to restore gloss.
Authenticity notes
- A Polish festive dish: Sweet poppy seed dishes are closely associated with Polish holiday cooking, especially Christmas Eve tables.
- Nuts and dried fruit vary: The exact mix of dried fruit, citrus and nuts can differ by household, but poppy seeds and sweet noodles remain the defining elements.

Instructions
- Put the poppy seeds in a saucepan and cover with plenty of water. Bring to the boil, then reduce to a gentle simmer for 25 minutes until the seeds are softened. Drain well in a colander and return them to the saucepan.
- Meanwhile, put the raisins and dried apricots in a bowl and cover with just-boiled water. Leave for 10 minutes to plump, then drain; cut the apricots into small pieces. Roughly chop the walnuts.
- Bring a large pot of water to the boil and add the fine sea salt. Cook the egg noodles until tender, following the packet timing, then drain well. Return the noodles to the pot.
- Add the unsalted butter to the warm noodles and toss until melted and glossy. Tip the drained poppy seeds into the pot. Fold gently to combine.
- Add the honey, caster sugar and dried orange zest, then stir over a low heat for 2 to 3 minutes until the mixture is evenly coated and lightly warmed. Fold in the raisins, apricots and walnuts. Serve at room temperature, or warm gently until just heated through.
