Pumpkin Cheesecake Swirl Brownies
Why this recipe works
- Dense brownie, creamy topping: The mixtures bake together but retain distinct textures: soft cheesecake above a denser chocolate base.
- Cocoa balances the pumpkin layer: Dark chocolate and cocoa temper the sweet pumpkin and cinnamon, while cream cheese gives the topping a gentle tang.
- Chilling helps the portions hold: The cold rest firms both layers, allowing neat squares to be cut before guests arrive.
- The batter supplies its own pattern: Reserved brownie batter makes dark ribbons in the orange cheesecake, creating the decoration without a separate icing or complicated piping.

Ingredient notes
- Choose plain pumpkin purée: Plain canned purée keeps the sugar and cinnamon in balance. Mix it thoroughly into the cream cheese for an even orange layer.
- Soften the cream cheese evenly: The specified room-temperature cream cheese should stir smoothly before the other topping ingredients are added. Cold lumps are difficult to remove once the mixture is loosened with egg.
Common mistakes
- Fold the brownie batter briefly: Stop folding once the flour and cocoa disappear. Further mixing develops a firmer crumb instead of the intended dense, tender texture.
- Keep the swirl broad and shallow: Draw the skewer through only a few times. Repeated stirring blends the colours and disperses the cheesecake instead of leaving distinct ribbons.
- Keep the specified tin size: A larger tin spreads the layers too thinly, while a smaller one leaves a deeper centre. Use the stated tin for the intended thickness and baking cues.
Timing notes
- Confirm doneness before cooling: The cheesecake must be set and reach the stated centre temperature before the tin leaves the oven. Chilling firms a cooked topping but does not make undercooked batter safe.
- Allow for the full cooling and chilling sequence: Allow for both rack cooling and the full refrigerated rest. Move the tin to the fridge within the stated limit rather than leaving it out until serving.
Serving ideas
- Lift before cutting: Use the baking paper to lift the cold slab onto a board. Keeping it level protects the cheesecake layer while you divide the squares.
- Bring out small chilled batches: Arrange only the portions needed on the serving plate and keep the rest covered in the fridge. Apply the same room-temperature limit to every batch.

Instructions
- Heat the oven to 170°C (340°F) and line a 20 cm square tin with baking paper. Reserve 170 g sugar and 2 eggs for the brownie, then whisk the cream cheese, pumpkin, remaining 50 g sugar, remaining egg and cinnamon until smooth.
- Melt the butter and dark chocolate together over low heat, then cool for 5 minutes until warm rather than hot. Whisk in the reserved sugar and eggs, then the vanilla and salt.
- Fold in the flour and cocoa until no dry streaks remain. Reserve 4 tablespoons of brownie batter, spread the rest in the tin and spoon the pumpkin mixture over it.
- Dot the reserved batter across the top and drag a skewer through it a few times to make broad orange-and-brown swirls. Do not stir the layers together completely.
- Bake for 35–40 minutes until the cheesecake is set, the centre reaches at least 72°C (160°F), and a skewer in the brownie shows moist crumbs rather than liquid batter. Loosely cover if the top darkens before the centre sets.
- Cool in the tin on a rack for 50 minutes, then refrigerate for at least 90 minutes before cutting into 16 squares. Transfer to the fridge within 2 hours of leaving the oven.

Tips
- Do not taste either raw mixture; clean the mixing tools before they touch the finished brownies.
- Use a metal tin 20 cm square and at least 4 cm deep for the intended brownie thickness. Lift the cold slab out with the baking paper before cutting.
Substitutions
- Replace the cinnamon with ground ginger for a sharper spice note.
Storage
- Refrigerate up to 3 days
- Keep covered in the fridge at 4°C (40°F) or below for up to 3 days. Serve in small batches and discard after 2 hours at room temperature. Cut cold leftover brownies into small cubes for dessert bowls; keep them refrigerated until serving rather than warming the cheesecake layer.
