Niçoise Grain Bowl (Quinoa with Tuna, Vegetables and Dijon Dressing)
Why this recipe works
- Bright, balanced dressing: Dijon mustard and red wine vinegar cut through the tuna, egg and potatoes, keeping the bowl lively rather than heavy.
- Varied textures: Fluffy quinoa, tender potatoes, crisp-tender beans, juicy tomatoes and briny olives make each bowl feel layered and complete.
- Good for planned lunches: Most components can be cooked ahead and assembled just before serving, with the dressing added at the end for freshness.

Timing notes
- Let the quinoa stand: Resting the quinoa off the heat helps it finish steaming and makes the grains easier to fluff.
- Serve after dressing: Dress the bowl close to serving so the vegetables stay bright and the quinoa does not absorb too much acidity.
- Best texture same day: The beans and tomatoes are at their freshest on the day they are prepared, especially if the bowl is served slightly cool rather than fridge-cold.
Make-ahead tips
- Keep the dressing separate: Store the quinoa, vegetables and tuna without the dressing, then spoon it over just before eating.
- Cook the base in advance: The quinoa, potatoes and green beans can be cooked ahead and chilled, making final assembly quick.
- Add the eggs last: For the best result, cook and add the eggs when serving rather than storing peeled halves with the rest of the bowl.
Authenticity notes
- Niçoise-inspired, not classic: The tuna, egg, olives, green beans, tomatoes and mustardy dressing echo salade Niçoise, while quinoa makes it a modern grain-bowl variation.
- Potatoes make it heartier: New potatoes are a familiar addition in many Niçoise-style salads, adding substance and a softer texture alongside the crisp vegetables.
Ingredient notes
- Use good tuna: Choose canned tuna with a clean, savoury flavour, as it is one of the main ingredients and strongly shapes the finished bowl.
- Ripe tomatoes matter: Sweet, ripe cherry tomatoes balance the sharpness of the dressing and the saltiness of the olives.
- Adjust the dressing to taste: If the dressing tastes too sharp, whisk in a little more olive oil; if it feels flat, add an extra splash of vinegar.

Instructions
- Rinse the quinoa in a colander. Tip into a saucepan with 280 ml water and 0.5 tsp of the fine sea salt, bring to the boil, then cover and simmer on low for 12–15 minutes until the water is absorbed. Take off the heat, cover and stand for 5 minutes, then fluff with a fork.
- Meanwhile, put the new potatoes in a saucepan, cover with cold water and add 0.5 tsp of the fine sea salt. Bring to the boil and cook for 12–15 minutes until a knife slides in easily. Drain, then halve any larger potatoes.
- Bring a small pan of water to the boil and lower in the eggs. Simmer for 7 minutes for soft-boiled, then drain and cool under cold running water. Peel and halve.
- Bring a pan of salted water to the boil (use the remaining 0.5 tsp fine sea salt). Add the green beans and cook for 3–4 minutes until bright green and just tender. Drain and cool briefly under cold water, then drain well.
- Halve the cherry tomatoes. In a mixing bowl, whisk together the Dijon mustard, red wine vinegar and extra virgin olive oil until emulsified. Taste and adjust with a pinch more salt if needed.
- Divide the quinoa between two bowls. Arrange the potatoes, green beans, cherry tomatoes, black pitted olives and canned tuna on top, then add the egg halves. Spoon over the dressing and serve straight away.
Recipe notes
Tips
- For the best texture, cool the green beans quickly after boiling so they stay bright and crisp-tender.
- If you prefer a looser dressing, whisk in 1 tbsp water until it coats the vegetables lightly.
- Food safety: if serving to pregnant people, young children, older adults, or anyone immunocompromised, cook the eggs until the yolks are firm.
Substitutions
- Replace quinoa with brown rice for a more traditional, hearty base.
- Replace red wine vinegar with white wine vinegar for a slightly softer acidity.
- Replace Dijon mustard with whole-grain mustard for a coarser texture.
Storage
- Refrigerate up to 2 days
- Store the quinoa, vegetables and tuna in an airtight container in the fridge for up to 2 days. Keep the dressing separate if possible; add just before serving. For best results, add freshly cooked eggs when serving, as peeled eggs do not keep as well.
