Scaloppine al Limone (Veal Cutlets with Lemon Sauce)
Why this recipe works
- Fast cooking: Thin veal cutlets cook in under a minute per side, keeping the dish quick without sacrificing tenderness.
- Bright, balanced sauce: Lemon juice cuts through the butter, while wine and stock add savoury depth to the pan sauce.
- Classic pan-sauce method: Deglazing the frying pan captures the browned bits from the veal and turns them into a glossy sauce.

Common mistakes
- Cooking the veal too long: Veal cutlets are very lean and thin, so remove them as soon as they are lightly golden and just cooked through.
- Boiling the butter sauce: Once the butter is whisked in, keep the heat gentle; boiling can make the sauce split rather than turn glossy.
- Overfilling the pan: Fry the cutlets in a single layer so they brown quickly instead of steaming.
Ingredient notes
- Choose thin, even cutlets: Evenly thin veal cooks quickly and consistently, which is essential for the tender texture of scaloppine.
- Add lemon to taste: Lemons vary in sharpness, so stir in most of the juice first, then add more if the sauce needs extra brightness.
- Use a dry white wine: A dry wine keeps the sauce savoury and clean rather than sweet.
Ingredient swaps
- Without wine: Use chicken stock in place of the wine and add a little extra lemon juice at the end to keep the sauce lively.
- Alternative herb: Fresh basil can replace parsley in a smaller amount for a softer, sweeter finish.
Serving ideas
- Simple sides: Serve with boiled potatoes, sautéed greens or a crisp salad to keep the plate balanced.
- Something to catch the sauce: Crusty bread or plain rice works well with the lemon-butter pan sauce.
- Wine pairing: Choose a crisp Italian white such as Pinot Grigio or Verdicchio to echo the citrus and cut through the butter.

Instructions
- Pat the veal dry, then season both sides with the salt and pepper. Put the flour on a plate and lightly coat the cutlets, shaking off any excess. Juice the lemon and finely chop the parsley.
- Heat the olive oil and 20 g of the butter in a large frying pan over a medium-high heat until the butter foams. Fry the veal in a single layer for 45 to 60 seconds per side, just until lightly golden and only just cooked through. Transfer to warm plates.
- Pour the wine into the pan and simmer for 1 to 2 minutes, scraping up any browned bits, until reduced by about half. Add the chicken stock and simmer for 2 to 3 minutes until slightly reduced. Lower the heat to medium-low.
- Whisk in the remaining butter a little at a time until the sauce looks glossy and lightly thickened, without letting it boil. Stir in most of the lemon juice, then taste and add a little more if you want it sharper. Return the veal to the pan for 30 to 60 seconds to warm through and coat in the sauce.
- Spoon the sauce over the veal and finish with the parsley. Serve straight away with extra lemon from the remaining juice if you like.
Recipe notes
Tips
- Keep the cutlets moving and cook them quickly; veal dries out fast if overcooked.
- Once the butter goes into the sauce, keep the heat low and do not let it boil, or the sauce can split.
- If serving anyone who is pregnant, elderly, or immunocompromised, make sure the veal is cooked through and use pasteurised stock.
Substitutions
- Replace Dry White Wine with the same amount of Chicken stock, and add a little extra Lemon juice to keep the sauce bright.
- Replace Fresh parsley with a smaller amount of Fresh basil for a softer, sweeter herb note.
Storage
- Refrigerate up to 2 days
- Best eaten straight away. If you have leftovers, cool quickly and refrigerate; reheat gently in a frying pan over a low heat with a splash of Chicken stock until piping hot, as the butter sauce can split if overheated.
