Hutspot Met Worst (Dutch Potato, Carrot and Onion Mash with Sausage)
Why this recipe works
- Efficient cooking: The potatoes, carrots, onions and sausage cook in the same pot, keeping the method simple and the clean-up minimal.
- Soft, creamy mash: Draining the vegetables well and letting them steam dry briefly helps the mash stay fluffy rather than watery.
- Balanced comfort: Sweet carrots and onions are balanced by mustard, black pepper and savoury sausage for a straightforward, warming dinner.

Authenticity notes
- Dutch home-style mash: Hutspot belongs to the Dutch stamppot family: cooked vegetables mashed with potatoes and served as a hearty main dish.
- Sausage pairing: Smoked pork sausage is a familiar match, adding saltiness and depth to the mild, sweet vegetable mash.
Texture tips
- Avoid watery mash: Drain the vegetables thoroughly, then return them to the hot pot briefly so excess steam can evaporate before mashing.
- Add milk gradually: Pour in the milk a little at a time and mash between additions until the texture is soft and spoonable.
- Mash while hot: The vegetables mash more evenly when hot, especially once the butter has melted through.
Ingredient notes
- Potato choice: Yukon Gold potatoes give the mash a naturally buttery texture and hold up well with the carrots and onions.
- Mustard balance: Dijon mustard adds gentle sharpness, cutting through the sweetness of the carrots and onions without making the dish spicy.
- Milk richness: Whole milk gives a fuller, creamier finish; skim milk works for a lighter mash but will taste less rich.
Make-ahead tips
- Cook ahead: The mash can be made in advance, cooled quickly and refrigerated in an airtight container.
- Reheat gently: Warm the mash in a saucepan with a little milk, stirring until hot throughout; reheat the sausage separately until piping hot.
- Freeze separately: For the best texture, freeze the mash and sausage in separate containers, then defrost overnight in the fridge before reheating.

Ingredients
Instructions
- Peel the potatoes and carrots, then cut them into even chunks. Peel and slice the onion. Put the potatoes, carrots and onion into a large pot and add enough water to just cover, then stir in 1 tsp of the salt.
- Bring to the boil, then reduce to a steady simmer and cook for 15 minutes. Nestle the sausages on top of the vegetables, cover, and simmer for 15 to 20 minutes more until the vegetables are very tender and the sausages are piping hot throughout.
- Lift the sausages out to a plate and cover to keep warm. Drain the vegetables well in a colander, then return them to the hot pot and let the steam evaporate for 1 minute. Mash until smooth with a potato masher.
- Add the butter and mash again until melted and glossy. Pour in the milk a little at a time, mashing until soft and spoonable. Stir in the mustard, then season with the remaining salt and the black pepper.
- Slice the sausages or serve them whole alongside the mash. Taste and add a little more black pepper if you like. Serve hot.

- If serving to anyone vulnerable, make sure the sausages are fully cooked and piping hot throughout before serving.
Substitutions
- Replace Whole milk with Skim milk for a lighter mash.
- Replace Dijon mustard with Whole-grain mustard for a milder heat and a coarser texture.
