Bacalhau da Consoada (Salt Cod with Potatoes, Cabbage and Eggs)

At the Portuguese Christmas Eve table, Bacalhau da Consoada is a quietly generous dish: salt cod served with potatoes, cabbage and hard-boiled eggs, finished with warm garlic-scented olive oil. The cod is soaked in advance to soften its salinity, then poached gently so it stays moist and flakes cleanly. Boiled potatoes give substance, Savoy cabbage adds sweetness and structure, while vinegar, black pepper and olives sharpen the richness of the oil. It is simple in technique but distinctive in flavour, with the comfort of a one-platter meal and the savoury depth that makes salt cod so enduring in Portuguese cooking.

Why this recipe works

  • Gentle poaching protects the cod: Keeping the water at a bare simmer helps the salt cod turn tender and flaky without drying out or breaking apart.
  • Simple ingredients, savoury depth: Bay, garlic, extra virgin olive oil, vinegar and olives bring aroma, richness and briny contrast to the mild potatoes, cabbage and eggs.
  • Built for sharing: Arranging everything on a warm platter makes the dish easy to serve family-style, with the garlic oil dressing distributed over the fish and vegetables.

Timing notes

  • Allow time to soak the cod: The salt cod needs a long soak in cold water, with several water changes, so start well ahead of serving.
  • Serve while warm: The dish is best served straight after assembly, while the potatoes, cabbage and cod can absorb the warm garlic oil.

Authenticity notes

  • Christmas Eve tradition: Bacalhau da Consoada is closely associated with Portuguese Christmas Eve meals, where salt cod is commonly served with boiled vegetables and eggs.
  • Platter-style presentation: Serving the cod, potatoes, cabbage and eggs together on a large platter reflects the dish’s simple, generous character.

Ingredient notes

  • Check the cod after soaking: Taste a small flake before cooking; it should be pleasantly seasoned rather than sharply salty.
  • Use good olive oil: Because the dressing is so central to the dish, a full-flavoured extra virgin olive oil makes a noticeable difference.
  • Balance the vinegar: White wine vinegar lifts the richness of the oil and cod; add a little more only if you prefer a sharper finish.

Common mistakes

  • Boiling the cod: A rolling boil can make salt cod dry and cause it to fall apart, so keep the water gently simmering.
  • Overcooking the cabbage: Add the cabbage near the end so it becomes tender but still holds its shape and colour.
  • Browning the garlic: Warm the garlic gently in the oil; if it browns, it can turn bitter and dominate the dressing.

  1. Soak the salted cod in plenty of cold water in the fridge for 24 hours, changing the water 3 to 4 times. Drain well and taste a small flake; it should be pleasantly seasoned, not aggressively salty. If it is still very salty, soak for a few more hours with one more water change.
  2. Peel the potatoes and cut into large, even chunks. Cut the savoy cabbage into wedges, keeping the core intact so the leaves hold together. Peel and thinly slice the garlic.
  3. Put the eggs in a saucepan, cover with cold water and bring to the boil. Simmer for 10 minutes, then cool under cold running water and peel. Set aside.
  4. Bring a large pot of water to a gentle simmer and add the bay leaves. Add the cod and poach very gently for 8 to 12 minutes, until the fish flakes easily and is just opaque. Lift out with a slotted spoon and keep warm.
  5. In the same pot, add the potatoes and simmer for 15 to 20 minutes until tender. Add the cabbage for the last 6 to 8 minutes, until tender but still bright. Drain well in a colander.
  6. Warm the extra virgin olive oil in a saucepan over low heat, then add the garlic and cook for 2 to 3 minutes until fragrant but not browned. Stir in the white wine vinegar and black pepper, then take off the heat. Taste and adjust with a little more vinegar if you like it sharper.
  7. Arrange the cod, potatoes, cabbage and eggs on a warm serving platter, then scatter over the black pitted olives. Spoon the warm garlic oil over everything, making sure the fish and potatoes get plenty. Serve straight away.

Recipe notes

Tips

  • Keep the poaching water at a bare simmer; if it boils, the cod can break up and turn dry.
  • If serving to pregnant people, young children, older adults, or anyone immunocompromised, use eggs with a trusted safety standard and cook until the yolks are fully set.

Substitutions

  • Replace Savoy cabbage with kale for a more robust, slightly earthy finish.
  • Replace White wine vinegar with sherry vinegar for a rounder, nuttier acidity.

Storage

  • Refrigerate up to 2 days
  • Cool leftovers quickly, then refrigerate in a sealed container. Reheat gently in a saucepan with a splash of water and a little extra virgin olive oil until piping hot; avoid boiling the fish.
