Risalamande (Danish Almond Rice Pudding with Cherry Sauce)
Why this recipe works
- Light but creamy texture: Chilled rice pudding gives the dessert body, while softly whipped cream keeps it airy rather than heavy.
- Simple layered flavour: Vanilla, milk, almonds and cherries create a clear balance of creamy, fragrant, nutty and fruity notes.
- Well suited to preparing ahead: The rice pudding needs time to chill, so most of the work can be done before serving.

Timing notes
- Chill until fully cold: The rice pudding should be completely cold before the cream is folded in, otherwise the whipped cream can lose volume.
- Serve with warm sauce: The pudding is best served cold, with the cherry sauce warmed gently just before serving for contrast.
Texture tips
- Keep the simmer gentle: Milk-based rice pudding can catch or turn grainy if boiled hard, so use low heat and stir regularly.
- Fold gently: Whip the cream only to soft peaks and fold it through the chilled pudding with a light hand to preserve volume.
Ingredient notes
- Use short-grain rice: Short-grain rice releases starch as it cooks, giving the pudding its characteristic creamy consistency.
- Choose cherries to suit the sauce: Sweet cherries give a mellow fruit sauce, while sour cherries bring a sharper, more traditional tang.
- Vanilla matters here: Because the pudding is simply flavoured, a vanilla bean gives a clean fragrance that carries through the chilled dessert.
Make-ahead tips
- Make the rice base ahead: Cook and chill the rice pudding in advance, then fold in the almonds and whipped cream closer to serving.
- Keep sauce separate: Store the risalamande and cherry sauce in separate containers so the pudding stays pale, creamy and thick.
- Warm the sauce gently: Reheat the cherry sauce over low heat until just warm; avoid a hard boil, which can dull the fruit texture.

Instructions
- Put the rice, whole milk, vanilla seeds and pod, and a pinch of salt into a saucepan. Bring just to a gentle simmer over medium heat, stirring often so the milk does not catch. Turn the heat to low and cook for 35 to 45 minutes, stirring regularly, until the rice is tender and the mixture is thick and creamy.
- Stir in the caster sugar and cook for 2 minutes, just until dissolved. Remove from the heat and lift out the vanilla pod. Scrape the pudding into a bowl and cool to room temperature.
- Cover and chill the rice pudding until fully cold and set. It should be thick enough to hold soft peaks when stirred. If it seems very stiff, give it a thorough stir to loosen before folding in the cream later.
- Roughly chop the blanched almonds. Whip the double cream in a mixing bowl to soft peaks. Fold the almonds into the cold rice pudding, then gently fold in the whipped cream until evenly combined and light.
- Chill the risalamande for at least 30 minutes so it firms up slightly and the flavours settle. Spoon into serving bowls or a serving dish. Keep chilled while you make the sauce.
- Put the sweet cherries into a saucepan with 2 tbsp lemon juice and 1 tsp finely grated lemon zest. Warm over low to medium heat for 8 to 12 minutes, stirring occasionally, until the cherries soften and release their juices and the sauce looks glossy. Serve the risalamande cold with the cherry sauce warm.
Recipe notes
Tips
- Keep the rice pudding at a very gentle simmer and stir often; a hard boil can make it catch and turn grainy.
- Whip the double cream to soft peaks only, then fold gently so the risalamande stays light rather than dense.
- If serving to young children, pregnant people, or anyone vulnerable, make sure the rice pudding is properly cooked and cooled quickly before chilling.
Substitutions
- Replace the blanched almonds with roasted almonds for a deeper, toastier flavour.
- Replace the caster sugar with light brown sugar for a slightly caramel note in the rice pudding.
- Replace the sweet cherries with sour cherries for a more traditional, tangier sauce.
Storage
- Refrigerate up to 3 days
- Keep the risalamande covered in the fridge and serve cold. Store the cherry sauce separately and reheat gently in a saucepan until just warm; do not boil hard.
