Julebrød (Norwegian Christmas Bread with Raisins and Mixed Peel)
Why this recipe works
- Classic enriched dough: Milk, butter, egg and sugar create a soft, tender loaf with the richness expected from festive Nordic baking.
- Fragrant festive flavour: Ground cardamom gives the bread its recognisable aroma, while raisins and candied peel add sweetness and citrus.
- Keeps well: The loaf can be wrapped for short storage or frozen in slices, making it practical for Christmas breakfasts, coffee breaks and guests.

Timing notes
- Judge the rise, not just the clock: The dough should double on the first prove and crown above the tin on the second; a cool kitchen will slow this down.
- Let it settle before slicing: Cooling briefly helps the crumb firm up, so the loaf slices more cleanly instead of tearing.
- Best when fresh: The bread is at its softest on the day it is baked, but it remains good well wrapped for the next day or two.
Ingredient notes
- Use fragrant cardamom: Cardamom is central to the flavour of julebrød, so use a fresh, aromatic ground spice rather than an old jar that has lost its scent.
- Choose soft dried fruit: Plump raisins distribute more evenly through the dough and give a better bite than very dry fruit.
- Mixed peel affects sweetness: Candied orange peel gives a rounded citrus note, while candied lemon peel tastes brighter and sharper.
Make-ahead tips
- Freeze in slices: Slice the cooled loaf before freezing so individual pieces can be defrosted as needed.
- Refresh gently: Defrost at room temperature, then warm briefly in a 180°C (355°F) oven to bring back softness.
- Wrap before carrying: Keep the loaf well wrapped once cool so the soft crust does not dry out before serving.
Authenticity notes
- A festive Norwegian loaf: Julebrød is strongly associated with Christmas baking in Norway and is usually served sliced rather than as a dessert-style cake.
- Cardamom is essential: The warm spice is one of the flavours that makes the bread immediately recognisable within Nordic festive baking.
- Simple serving: Serve slices plain, lightly buttered or with a mild cheese for a traditional coffee-table style presentation.

Instructions
- Warm the milk in a saucepan until just lukewarm, then take off the heat. Stir in the butter and sugar until the butter melts, then leave to cool to lukewarm if it feels hot.
- In a stand mixer bowl, mix the flour, instant yeast, salt and cardamom. Add the milk mixture and the egg, then mix with a dough hook on low until a shaggy dough forms.
- Knead on medium speed for 8 to 10 minutes until smooth and elastic, and the dough pulls away from the bowl. If it seems very sticky, keep kneading for a minute or two rather than adding extra flour.
- Add the raisins and candied orange peel and mix on low just until evenly distributed. Shape the dough into a ball and place in a lightly buttered bowl.
- Cover and leave to prove in a warm place until doubled in size. This usually takes 60 to 75 minutes, depending on room temperature.
- Grease a loaf tin with a little butter. Tip the dough out, press out the air, then shape into a neat loaf and place seam-side down in the tin.
- Cover and prove again until the dough crowns about 2 to 3 cm above the rim of the tin and springs back slowly when pressed. This will take about 45 to 60 minutes.
- Heat the oven to 190°C (375°F). Bake for 30 to 35 minutes until deep golden and the loaf sounds hollow when tapped; if it browns too quickly, loosely cover the top with foil.
- Turn the loaf out onto a cooling rack. Melt the finishing butter and brush it over the hot loaf for a soft, glossy crust, then cool for at least 10 minutes before slicing.
Recipe notes
Tips
- For the best rise, make sure the milk mixture is only lukewarm before it goes in with the yeast; if it is hot, it can slow the fermentation.
- If you have a thermometer, the loaf is ready when the centre reaches about 93°C (200°F).
- If serving to pregnant people, young children, older adults, or anyone immunocompromised, use eggs stamped with the British Lion mark.
Substitutions
- Replace Candied orange peel with Candied lemon peel for a brighter citrus note.
- Replace Raisin with Sultana for a softer, sweeter fruit.
Storage
- Refrigerate up to 3 days
- Keep the loaf well wrapped; it is best at room temperature for 2 days, or in the fridge for up to 3 days. Freeze sliced for up to 2 months and defrost at room temperature, then refresh in a 180°C (355°F) oven for 5 to 8 minutes.
