Polish-Style Potato Bowl with Mushrooms and Sauerkraut

Warm potato bowls like this draw on familiar Polish flavours: tender potatoes, browned mushrooms, sweet caramelised onion, sharp sauerkraut and plenty of dill. The result is hearty without feeling heavy, with the potatoes acting as a soft, savoury base for earthy mushrooms and a cool mustard-sour cream dressing. Sauerkraut brings the acidity that keeps each bite lively, while dill adds a fresh herbal finish. It works especially well as a vegetarian lunch or simple supper, and the components can be kept separate for easier reheating and assembly.

Why this recipe works

  • Contrasting textures: Tender potatoes, browned mushrooms and crisp sauerkraut keep each bite varied.
  • Balanced richness: Sauerkraut and mustard cut through the sour cream dressing and earthy mushrooms.
  • Simple cooking method: The recipe uses straightforward boiling and sautéing, with most flavour built in one pan.

Ingredient notes

  • Choose waxy potatoes: Yukon Gold potatoes hold their shape well after boiling and give the bowl a creamy, firm texture.
  • Adjust the sauerkraut: If the sauerkraut tastes very sharp, rinse and drain it well before adding it to the bowl.
  • Use fresh dill if possible: Fresh dill gives a cleaner, brighter finish than dried dill, especially against the creamy dressing.

Texture tips

  • Steam-dry the potatoes: Returning the drained potatoes to the hot pot briefly helps excess moisture evaporate before assembly.
  • Brown the mushrooms properly: Let the mushrooms sit in the pan before stirring so their moisture cooks off and the edges can colour.

Make-ahead tips

  • Keep toppings separate: Store the warm potato and mushroom mixture separately from the sauerkraut, dill and dressing to preserve texture.
  • Reheat gently: Warm the potatoes and mushrooms with a splash of water over low heat until piping hot, then add the cold toppings.

  1. Peel the potatoes and cut into even chunks. Put them in a large pot, cover with cold water, and add 1 tsp of the salt. Bring to the boil, then simmer for 12 to 15 minutes until tender.
  2. Meanwhile, thinly slice the onion and slice the mushrooms. Heat the rapeseed oil in a large frying pan over medium heat, then cook the onion with a pinch of the remaining salt for 10 to 12 minutes, stirring often, until deep golden and caramelised. Add the mushrooms and cook for 6 to 8 minutes until their liquid has evaporated and they are browned.
  3. In a small bowl, whisk the Dijon mustard with the sour cream, 2 tbsp water, and the black pepper until smooth. Taste and season with the remaining salt if needed. Keep the dressing cool while you finish the bowl.
  4. Drain the potatoes well and return them to the pot for 1 minute to steam dry. Divide the warm potatoes between two bowls. Spoon over the mushroom and onion mixture, then add the sauerkraut.
  5. Finely chop the dill and scatter it over the bowls. Drizzle with the mustard dressing and serve straight away while the potatoes are still warm. Add a little extra black pepper on top if you like.

Recipe notes

Tips

  • For the best texture, let the mushrooms sit in the hot pan for a minute or two before stirring so they brown rather than steam.
  • If your sauerkraut is very sharp, rinse it briefly under cold water and drain well before serving.
  • If serving to anyone who is pregnant, elderly, or immunocompromised, use pasteurised sour cream.

Substitutions

  • Replace Cremini mushrooms with button mushrooms for a milder flavour.
  • Replace Sour cream with greek-yogurt for a lighter, tangier finish.
  • Replace Dijon mustard with whole-grain mustard for a coarser texture.

Storage

  • Refrigerate up to 3 days
  • Store the potatoes and mushroom-onion mixture together in an airtight container, and keep the sauerkraut, dill, and dressing separate. Reheat the warm components in a saucepan with a splash of water over low heat until piping hot, then assemble with the cold toppings.
