Revani (Greek Semolina Syrup Cake with Lemon)

Golden, syrup-soaked revani sits somewhere between a simple tea cake and a festive dessert: tender from yoghurt, lightly grainy from fine semolina and brightened with lemon. In the Greek version, the cake is baked until just golden, then drenched while hot with a warm citrus syrup so the crumb absorbs sweetness without losing structure. Once cooled, it is cut into neat squares, making it easy to serve for gatherings, after-dinner dessert or with coffee. The key character is its moist but not heavy texture, with the lemon keeping the syrup from feeling cloying.

Why this recipe works

  • Tender semolina crumb: Fine semolina gives the cake its recognisable light grain and helps it hold the syrup without collapsing.
  • Bright lemon balance: Lemon juice and zest cut through the sweetness of the syrup, keeping the finished cake fresh rather than heavy.
  • Improves as it settles: Cooling the cake in the tin gives the syrup time to absorb fully, making it easy to slice and serve later.

Timing notes

  • Let it cool fully: Revani slices cleanly only once the syrup has settled into the crumb, so allow it to cool completely in the tin before cutting.
  • Most of the time is inactive: The hands-on work is brief; the longer time comes from baking, soaking, and cooling.

Texture tips

  • Soak gradually: Pour the warm syrup over the hot cake slowly, pausing as it absorbs, to avoid a wet layer sitting on the surface.
  • Fold gently: Once the semolina and flour are added, mix only until no dry patches remain so the crumb stays light.

Authenticity notes

  • Syrup-soaked style: Revani belongs to the family of Greek syrup cakes, where a baked semolina sponge is soaked after baking rather than glazed on top.
  • Simple square portions: Cooling and cutting the cake into squares is the classic serving style, making it practical for sharing.

Make-ahead tips

  • Make ahead: The cake can be baked and soaked in advance, then kept chilled until needed.
  • Serve at room temperature: For the best texture, bring chilled slices to room temperature before serving so the crumb feels soft and moist.
  • Freeze in portions: Freeze individual squares and defrost them overnight in the fridge for easy serving later.

  1. Heat the oven to 180°C (355°F). Grease a 20 cm square cake tin with a little of the butter.
  2. Make the syrup first: put the water and 150 g of the caster sugar in a saucepan. Use a peeler to remove strips of lemon peel, add them to the pan, then simmer for 8 to 10 minutes until slightly thickened.
  3. Take the syrup off the heat and squeeze in about 2 tbsp lemon juice, then leave to cool to warm. Discard the peel once infused.
  4. Melt the remaining butter and leave it to cool slightly. In a bowl, whisk the eggs with the remaining 100 g caster sugar for 2 to 3 minutes until paler and a little foamy.
  5. Whisk in the vanilla extract, the greek yogurt, and the zest of the lemon. Slowly whisk in the melted butter until smooth.
  6. In a separate bowl, whisk together the fine semolina, plain flour and baking powder. Fold the dry ingredients into the wet mixture just until no dry pockets remain.
  7. Scrape the batter into the prepared tin and level the top. Bake for 30 to 35 minutes until golden and a skewer inserted in the centre comes out clean.
  8. While the cake is hot, prick it all over with a skewer. Pour the warm syrup over slowly, letting it soak in before adding more.
  9. Leave the revani to cool completely in the tin so the syrup fully absorbs. Cut into 9 squares to serve.

Recipe notes

Tips

  • For the best soak, aim for a hot cake and warm syrup, not boiling, so it absorbs evenly without turning soggy on top.
  • If serving to anyone who is pregnant, elderly, or immunocompromised, use eggs that are stamped with a food safety mark and bake until the centre is fully set.

Substitutions

  • Replace Vanilla extract with the finely grated zest of the lemon for a brighter, more citrus-forward flavour.
  • Replace Greek yogurt with plain yogurt for a slightly lighter tang and a looser batter.

Storage

  • Refrigerate up to 4 days
  • Store in an airtight container in the fridge. For the best texture, bring to room temperature before serving; freeze individual squares and defrost overnight in the fridge.
