Kerala Chicken Stew (Mild Coconut Milk Stew with Potatoes and Carrots)

Kerala-style chicken stew is a gentle coconut milk curry where the emphasis is fragrance rather than heat. Often associated with Christmas meals in Kerala, it is recognisable for its pale, creamy broth, tender chicken, soft potatoes and sweet carrots, all scented with cardamom, cinnamon, black pepper, ginger, garlic and fresh curry leaves. The stew is simmered slowly so the coconut milk stays smooth and mellow, giving a comforting dish that feels rich without being heavy. Serve it hot with steamed basmati rice for an easy dinner that is mild, aromatic and family-friendly.

Why this recipe works

  • Gentle spice depth: Whole spices are bloomed in ghee before the onion, ginger and garlic are added, giving the stew fragrance without making it heavy or fiery.
  • Creamy, mild sauce: Coconut milk gives the stew its soft richness and pale colour, while gentle simmering helps keep the sauce smooth.
  • Soft, comforting ingredients: Chicken thighs, potatoes and carrots cook together until tender, making the stew satisfying without needing a complex garnish.

Authenticity notes

  • Kerala-style flavour: The dish reflects Kerala’s preference for coconut-based gravies, aromatic whole spices and curry leaves rather than a heavily browned or chilli-led curry base.
  • Festive context: Kerala chicken stew is often associated with Christmas meals, where its mild coconut sauce works well alongside rice or soft breads.

Ingredient notes

  • Use fresh curry leaves if possible: Fresh curry leaves give the stew its distinctive savoury citrus aroma; dried leaves are less fragrant and will make the flavour softer.
  • Choose coconut milk for body: A richer coconut milk gives a fuller, creamier stew, while lighter versions produce a thinner sauce.
  • Keep the spices whole: Whole cardamom, cinnamon and peppercorns perfume the coconut milk without darkening the stew or making the texture gritty.

Texture tips

  • Simmer gently: Once the coconut milk is added, keep the heat low and avoid a hard boil so the sauce stays smooth rather than separating.
  • Cook until just tender: Let the potatoes soften fully, but avoid extending the simmer for too long after the chicken is cooked through.

Make-ahead tips

  • Prep the vegetables in advance: The onion, ginger, garlic, potatoes and carrots can be prepared ahead to make the final cooking more streamlined.
  • Reheat gently: Warm leftovers over a low heat, stirring often, until piping hot; avoid boiling hard to protect the coconut milk texture.

  1. Halve and thinly slice the onion. Peel and finely grate the ginger, and peel and crush the garlic.
  2. Peel the potatoes and cut into bite-size chunks. Peel the carrots and slice into thick coins.
  3. Heat the ghee in a large pot over a medium heat. Add the cardamom pods, cinnamon stick and peppercorns and cook for 30 to 60 seconds, until fragrant.
  4. Add the onion with a pinch of the salt and cook for 6 to 8 minutes, stirring, until softened and translucent. Stir in the ginger and garlic and cook for 1 minute.
  5. Add the chicken and the remaining salt, and stir to coat in the spiced onion mixture. Cook for 4 to 5 minutes, stirring occasionally, until the chicken turns opaque on the outside.
  6. Add the potatoes, carrots and coconut milk, then add the curry leaves. Bring to a gentle simmer over a medium heat, then reduce to low and cook for 20 to 25 minutes, stirring now and then, until the potatoes are tender and the chicken is cooked through.
  7. Taste and adjust the salt if needed, keeping the stew pale and mild. Rest off the heat for 5 minutes so the flavours settle, then serve hot.

Serving suggestions

This recipe pairs well with:

Steamed basmati rice

Tips

  • Keep the heat low once the coconut milk is in, and avoid a rapid boil to prevent splitting.
  • Lightly bruise the cardamom pods with the side of a knife before adding them to help release their aroma.
  • If serving vulnerable groups, make sure the chicken is cooked until piping hot throughout with no pink remaining.

Substitutions

  • Replace ghee with unsalted butter for a similar richness.
  • Replace chicken thighs with chicken breast for a leaner stew; add it later and simmer gently until just cooked through.
  • Replace Idaho potato with new potatoes for a slightly firmer texture.

Storage

  • Refrigerate up to 3 days
  • Cool, cover and refrigerate within 2 hours. Reheat gently in a pot over a low heat until piping hot, stirring often; avoid boiling hard as the coconut milk can split.
