Mango Lassi Cheesecake

Mango lassi cheesecake takes the familiar flavours of the Indian yoghurt drink — ripe mango, tangy dairy and a hint of cardamom — and turns them into a chilled, sliceable dessert. The filling is smooth and creamy from cream cheese and Greek yoghurt, with lime zest sharpening the fruit and gelatine giving a clean set without baking. A digestive biscuit base adds buttery crunch, while the mango topping keeps the finish bright rather than heavy. It is a useful make-ahead dessert for warm-weather meals, celebrations or any occasion where a fragrant, fruit-led cheesecake feels more refreshing than a traditional baked version.

Why this recipe works

  • Creamy but sliceable: Cream cheese gives the filling structure, Greek yoghurt adds tang, and gelatin helps it set cleanly without baking.
  • Lassi-inspired flavour: Mango, yoghurt, lime, cardamom and vanilla echo the fragrant, fruity character of mango lassi in dessert form.
  • Built for chilling ahead: The cheesecake needs time in the fridge to firm, making it well suited to preparing before serving day.

Timing notes

  • Allow a full chill: The cheesecake should be firm at the edges with a gentle wobble in the centre before topping and slicing.
  • Serve well chilled: Slice straight from the fridge for the cleanest portions, using a warm, dry knife between cuts.

Ingredient notes

  • Use ripe mangoes: Ripe mangoes give the filling better sweetness, colour and aroma; underripe fruit can taste flat once chilled.
  • Cardamom matters: Ground cardamom brings the lassi-style fragrance, so use a fresh, aromatic jar rather than one that has faded.
  • Choose thick yoghurt: Greek yoghurt helps keep the filling creamy and stable; a thinner yoghurt may loosen the texture.

Texture tips

  • Start with soft cream cheese: Room-temperature cream cheese blends more evenly with the sugar and yoghurt, reducing the risk of small lumps.
  • Dissolve the gelatin gently: Warm it only until clear and dissolved, then let it cool briefly before whisking it into the filling.

Make-ahead tips

  • Make it the day before: The cheesecake can be prepared a day in advance and kept covered in the fridge until ready to serve.
  • Add the topping near serving: For the freshest look, spread the reserved mango purée over the set cheesecake on the day you plan to serve it.

Instructions

  1. Lightly grease a 23 cm springform cake pan. Melt the butter in a small saucepan over low heat until just melted. Stir in the digestive biscuit crumbs and salt until evenly coated.
  2. Tip the crumb mixture into the pan and press firmly into an even layer on the base. Chill while you make the filling so it firms up.
  3. Put the gelatin powder in a small heatproof bowl. Squeeze in 2 tbsp lime juice and add 2 tbsp cold water, then leave for 5 minutes to bloom.
  4. Warm the bloomed gelatin gently in a small saucepan over very low heat, stirring just until fully dissolved and clear. Take off the heat and leave to cool for 2 minutes so it is warm but not hot.
  5. Peel the mangoes and cut the flesh from the stones. Blend the mango flesh to a smooth purée, then set aside 150 g for the topping.
  6. In a mixing bowl, whisk the cream cheese with the caster sugar until smooth. Whisk in the ground cardamom, vanilla extract, and the finely grated zest of the lime.
  7. Whisk in the Greek yogurt until the mixture is creamy and uniform. Add the mango purée (except the reserved topping portion) and whisk until fully combined.
  8. With the whisk running, slowly pour in the warm dissolved gelatin and whisk for 30 seconds to distribute it evenly. Pour the filling over the chilled base and smooth the top.
  9. Cover and chill for at least 4 hours, or until set with a gentle wobble in the centre. Once set, spread the reserved mango purée over the top and chill for 10 minutes to firm slightly.
  10. Unclip the tin and slice with a warm, dry knife for neat portions. Serve chilled.

Recipe notes

Tips

  • To avoid lumps, make sure the cream cheese is at room temperature before whisking.
  • When dissolving the gelatin, keep the heat very low and do not let it boil, or it can weaken the set.
  • If serving to pregnant people, young children, older adults, or anyone immunocompromised, use pasteurised dairy and follow the gelatin packet guidance for safe handling.

Substitutions

  • Replace Vanilla extract with vanilla bean paste for a more pronounced vanilla flavour.
  • Replace Lime with lemon for a slightly softer citrus note.

Storage

  • Refrigerate up to 3 days
  • Keep covered in the fridge and slice only what you need to prevent the top from drying. For the cleanest slices, cut straight from the fridge with a warm knife.
