Braised Tofu with Shiitake Mushrooms (Light Soy-Braised Tofu)

Light soy-braised tofu with shiitake mushrooms sits in the Chinese home-cooking tradition of gently simmered, savoury dishes served with rice. Firm tofu is first browned so the edges hold their shape, then softened in a soy-based braising sauce with garlic, ginger and the deep umami of shiitake mushrooms. A little dark soy gives colour without making the dish heavy, while cornflour creates a glossy coating that clings to the tofu. Finished with spring onion and toasted sesame oil, it is warming, economical and satisfying enough for an easy vegan dinner.

Why this recipe works

  • Layered savoury flavour: Garlic, ginger, light soy sauce and dark soy sauce create a simple but rounded braising liquid that seasons the tofu as it simmers.
  • Better tofu texture: Pan-frying the tofu first gives it lightly golden edges, helping it hold its shape and absorb the sauce without turning fragile.
  • Good for leftovers: The tofu continues to take on flavour as it sits, making the dish well suited to cooking ahead and reheating gently.

Ingredient notes

  • Choose firm tofu: Firm tofu is the best fit here because it can be browned, turned and simmered without breaking apart too easily.
  • Use shiitake for depth: Shiitake mushrooms bring a deeper savoury flavour than milder mushrooms and help give the sauce a richer base.
  • Dry the tofu well: Pressing or patting the tofu before frying helps it brown more evenly and keeps the finished sauce from becoming watery.

Texture tips

  • Keep the simmer gentle: A gentle simmer helps the tofu stay intact while still allowing it to absorb the soy-based braising liquid.
  • Thicken at the end: Adding the cornflour mixture near the end keeps the sauce glossy and lightly coating rather than heavy or gluey.
  • Do not over-reduce the sauce: Let the sauce thicken just enough to cling to the tofu and mushrooms; reducing it too far can make the soy flavour too salty.

Make-ahead tips

  • Make ahead for easy meals: Cool completely, then refrigerate in a sealed container for up to 3 days.
  • Reheat gently: Warm in a frying pan with a splash of water until piping hot throughout, turning the tofu carefully so it does not break.
  • Freezer-friendly: Freeze for up to 2 months, then defrost overnight in the fridge before reheating.

  1. Pat the tofu dry, then cut into bite-sized pieces. Trim and slice the shiitake mushrooms, finely slice the spring onion, and peel and finely grate the ginger. Peel and finely chop the garlic.
  2. Heat the peanut oil in a large frying pan over medium-high heat. Add the tofu in a single layer and pan-fry for 6 to 8 minutes, turning carefully, until lightly golden on most sides. Transfer to a plate.
  3. Lower the heat to medium and add the mushrooms to the same pan. Cook for 4 to 5 minutes until they soften and start to take on colour. Stir in the garlic and ginger and cook for 30 seconds until fragrant.
  4. Whisk the light soy sauce, dark soy sauce, caster sugar and water together, then pour into the pan. Return the tofu to the pan and bring to a gentle simmer. Cook for 10 minutes, turning the tofu once or twice, until the flavours soak in.
  5. In a small bowl, whisk the cornflour with 2 tbsp of the hot braising liquid from the pan until smooth, then stir it back in. Simmer for 1 to 2 minutes until the sauce lightly thickens and coats the tofu and mushrooms. Stir in most of the spring onion and finish with the toasted sesame oil, then scatter over the remaining spring onion to serve.

Recipe notes

Tips

  • For the best texture, take a minute to press the tofu between clean tea towels before cutting; it browns more evenly and absorbs the braising sauce better.
  • Keep the braise at a gentle simmer rather than a rapid boil so the tofu stays intact and the mushrooms remain tender.
  • If serving vulnerable groups, ensure the dish is reheated until piping hot throughout.

Substitutions

  • Replace peanut oil with vegetable oil for a neutral flavour.
  • Replace caster sugar with honey for a rounder sweetness (note this makes the dish non-vegan).
  • Replace cornflour with arrowroot starch for a similarly glossy sauce.

Storage

  • Refrigerate up to 3 days
