Modern Vegetable Pajeon (Korean Spring Onion and Vegetable Pancake)

Pajeon is a Korean savoury pancake, usually served in wedges for sharing with a soy-based dipping sauce. This vegetable version keeps the focus on spring onions, with courgette and carrot folded through a light flour-and-potato-starch batter for sweetness, colour and texture. Pan-frying it thinly gives the best result: crisp, golden edges with tender vegetables inside, lifted by a little toasted sesame oil and a clean soy-rice vinegar dip. It works well as a quick dinner, snack or shared side, and is at its best served straight from the pan while still hot and crisp.

Why this recipe works

  • Crisp, golden edges: Potato starch helps the batter fry up lighter and crisper than flour alone.
  • Fast from start to finish: Grated vegetables and a simple pourable batter keep the cooking time short enough for a weeknight meal.
  • Sharp dipping sauce: Soy sauce brings savoury depth while rice vinegar cuts through the fried pancake with a clean, tangy finish.

Texture tips

  • Keep the batter cold: Cold water helps the batter stay light, while a thin layer in the pan encourages the vegetables to fry rather than steam.
  • Squeeze the courgette well: Removing excess moisture from the grated courgette is key to avoiding a soft or watery pancake.

Common mistakes

  • Watch the pan heat: If the pancake browns before the centre sets, reduce the heat slightly and cook it a little longer on each side.
  • Do not spread it too thickly: A thick pancake is more likely to turn heavy in the middle; press the vegetables into an even, shallow layer.

Make-ahead tips

  • Reheat in a dry pan: Rewarm refrigerated pajeon in a dry frying pan over medium heat until hot and crisp again.
  • Best served straight away: Pajeon has its best texture immediately after frying, when the edges are crisp and the centre is still tender.

Serving ideas

  • Keep the dipping sauce sharp: The soy and vinegar dip should taste savoury and bright, helping balance the richness of the fried batter.
  • Cut into wedges: Slice the pancake into wedges or squares so it is easy to share while still hot.

  1. Trim the spring onions, then cut into 6 to 7 cm lengths. Coarsely grate the courgette and carrot, then squeeze the courgette firmly to remove excess water. Set the vegetables aside.
  2. In a mixing bowl, whisk together the plain flour, potato starch and fine sea salt. Whisk in the cold water until you have a smooth, pourable batter, then stir in the spring onions, courgette and carrot until evenly coated.
  3. Mix the light soy sauce and rice vinegar in a small bowl for dipping, then set aside. Keep it simple and taste it now so you know what you are aiming for with the seasoning of the pancake.
  4. Heat a large frying pan over medium-high heat and add 1 tbsp sunflower oil. Pour in half the batter and spread it into a thin round, pressing the vegetables into an even layer. Drizzle 1 tsp toasted sesame oil over the top.
  5. Cook for 3 to 4 minutes until the underside is deep golden and crisp, loosening the edges with a spatula. Flip and cook for 3 to 4 minutes more until crisp and cooked through. Transfer to a board and repeat with the remaining sunflower oil, batter and toasted sesame oil.
  6. Cut the pajeon into wedges and serve straight away with the soy and vinegar dipping sauce. If you are sharing, keep the first pancake warm while you cook the second.

Recipe notes

Tips

  • For the crispest pajeon, keep the batter cold and spread it thinly so the vegetables fry rather than steam.
  • If the pancake is browning too quickly before it feels set, lower the heat slightly and give it an extra minute or two per side.
  • If serving to anyone vulnerable, make sure the pancake is cooked through and piping hot in the centre.

Substitutions

  • Replace rice vinegar with white vinegar for a sharper dipping sauce.
  • Replace sunflower oil with vegetable oil for frying.

Storage

  • Refrigerate up to 2 days
  • Cool completely, then refrigerate in an airtight container. Reheat in a dry frying pan over medium heat for 2 to 3 minutes per side until hot and crisp again.
