Latin American Seafood Stew with Tomato, Pepper and Lime
Why this recipe works
- Layered savoury base: Onion, red pepper, garlic, cumin, tomatoes and fish stock create a rounded broth before the seafood is added.
- Fresh citrus lift: Lime cuts through the tomato-rich sauce and keeps the finished stew bright rather than heavy.
- Fast-cooking seafood: Mussels, fish and prawns cook directly in the simmering broth, keeping the method efficient while preserving tenderness.

Adjust the heat
- For less heat: Remove the chilli seeds or replace the fresh chilli with smoked paprika for warmth without noticeable spice.
- For more heat: Use a hotter fresh chilli or add a pinch of chilli flakes with the cumin so the heat infuses into the sauce.
Timing notes
- Serve soon after cooking: The seafood is at its best just after it turns opaque and tender; prolonged holding can make the fish and prawns firm.
- Prep first, cook steadily: Have the mussels cleaned and the fish cut before starting, as the final cooking stage moves quickly.
Ingredient notes
- Choose firm white fish: Cod, hake or another firm white fish will hold its shape better than delicate fillets in the simmering broth.
- Check the mussels carefully: Use mussels with closed, intact shells and discard any that are cracked, do not close when tapped, or remain closed after cooking.
- Add lime to taste: Finish with lime gradually so the stew tastes bright without overpowering the seafood.
Common mistakes
- Boiling the seafood: Keep the broth at a gentle simmer once the seafood goes in; a hard boil can toughen prawns and break up the fish.
- Leaving prawns in too long: Remove the pot from the heat as soon as the prawns are pink and the fish is just opaque.

Ingredients
Instructions
- Prepare the seafood: scrub and debeard the mussels, discarding any that are cracked or do not close when tapped. Cut the fish into large bite-sized pieces. Finely chop the onion, dice the red pepper, finely slice the chilli, and crush the garlic.
- Heat the olive oil in a large pot over a medium heat. Add the onion and red pepper and cook for 6 to 8 minutes until softened and glossy. Stir in the chilli, garlic and cumin and cook for 1 minute until fragrant.
- Add the tomatoes and fish stock, bring to a gentle simmer, then cook for 10 minutes to meld the flavours. Keep the heat low so the sauce bubbles quietly rather than boiling hard. Taste and adjust with a squeeze of lime if you want it brighter at this stage.
- Add the mussels, cover, and cook for 4 to 6 minutes, shaking the pot once or twice, until the shells open. Discard any mussels that remain closed. Keep the sauce at a steady simmer.
- Gently slide in the fish and cook for 3 to 4 minutes until just turning opaque. Add the prawns and cook for 2 to 3 minutes until pink and just cooked through. Take off the heat as soon as the seafood is done to keep it tender.
- Finely chop the coriander and stir most of it through the stew. Squeeze in the remaining lime to taste. Ladle into bowls and scatter over the remaining coriander to serve.
Recipe notes
Tips
- Keep the stew at a gentle simmer once the seafood goes in; a hard boil can make the fish and prawns tough.
- If using mussels, discard any with broken shells, and always throw away any that do not open after cooking.
- Seafood cooks quickly, so have all your vegetables prepped before you start cooking.
Substitutions
- Replace Red chili pepper with 0.5 tsp smoked paprika for warmth without heat.
- Replace White fish fillet with Cod fillet for a firmer, flakier finish.
- Replace Lime with Lemon for a slightly softer citrus note.
Storage
- Refrigerate up to 2 days
- Cool quickly, then refrigerate in a sealed container. Reheat gently in a saucepan over a low heat until piping hot, stirring carefully so the fish stays in pieces; avoid boiling.
