Moroccan Seafood Bastilla (Filo Pie with Squid, Prawns and Fish)
Why this recipe works
- Crisp pastry contrast: Lightly oiled filo layers bake into a delicate, flaky crust around the softer seafood filling.
- Saffron-led depth: Saffron, garlic, coriander and seafood juices build flavour without making the filling heavy.
- Classic bastilla structure: Wrapping a savoury filling in thin pastry gives the dish its recognisable balance of richness and crunch.

Authenticity notes
- Seafood bastilla style: Seafood bastilla is a well-known Moroccan variation of bastilla, using fish and shellfish instead of the more familiar poultry filling.
- Served as a centrepiece: It is typically sliced at the table, making it suited to sharing rather than individual plating.
Texture tips
- Keep the filling fairly dry: Let excess liquid cook off before filling the pastry so the filo can crisp properly in the oven.
- Cook the seafood gently: Stop cooking the squid, prawns and fish once just opaque; they will continue to heat through during baking.
- Protect the filo: Keep unused filo covered while assembling, as dry sheets crack easily and are harder to fold neatly.
Make-ahead tips
- Prepare the filling ahead: The seafood filling can be cooked and chilled before assembly; let it cool fully before covering and refrigerating.
- Assemble close to baking: For the crispest pastry, layer the filo and fill the bastilla shortly before it goes into the oven.
- Reheat for crispness: Reheat leftovers on a baking tray at 180°C (355°F) until piping hot and the pastry has crisped again.
Ingredient notes
- Saffron matters here: Steeping saffron first helps release its colour and aroma evenly through the seafood filling.
- Choose firm white fish: A firm, skinless white fish fillet holds its shape better when flaked into the filling.
- Handle filo carefully: Filo dries quickly once exposed to air, so keep the sheets covered until each one is needed.

Ingredients
Instructions
- Heat the oven to 190°C (375°F). Put the saffron in a small bowl with 2 tbsp warm water and leave to steep while you prepare the filling.
- Heat 1 tbsp of the olive oil in a frying pan over a medium heat. Add the garlic and cook for 30 seconds until fragrant, then add the squid and cook for 2 minutes, stirring, until it turns opaque.
- Add the prawns and cook for 1 to 2 minutes until just pink. Flake in the white fish and cook for 2 to 3 minutes until the fish is opaque and the pan looks fairly dry.
- Stir in the saffron and its soaking liquid, then season with the fine sea salt and black pepper. Take off the heat and stir through most of the fresh coriander, reserving a little for serving.
- Beat the eggs in a mixing bowl. Return the pan to a low heat and pour in the eggs, stirring constantly for 2 to 4 minutes until they just set and coat the seafood; do not let them scramble hard.
- Brush a baking dish lightly with a little of the remaining olive oil. Lay in a sheet of phyllo dough, letting it overhang, then brush lightly with oil; repeat with more sheets, rotating the dish each time, until you have a generous lining.
- Spoon in the seafood filling and level it gently. Fold the overhanging pastry over the top, brushing with oil as you go, then add a final layer of phyllo dough on top and brush with the last of the oil.
- Bake for 30 to 35 minutes until deeply golden and crisp. Rest for 10 minutes so the filling settles, then slice and serve hot, scattered with the reserved coriander.
Recipe notes
Tips
- Keep the phyllo dough covered with a barely damp tea towel while you work so it does not dry out and crack.
- Cook the seafood only until just opaque before adding the eggs; overcooking at this stage can make the filling tough after baking.
- Eggs should be fully set before baking; if serving vulnerable groups, use eggs stamped with the British Lion mark or pasteurised eggs.
Substitutions
- Replace Fresh coriander with Fresh flat-leaf parsley for a milder, less citrusy herb note.
- Replace Olive oil with Clarified butter for a more traditional, richer pastry finish.
Storage
- Refrigerate up to 2 days
- Cool completely, then refrigerate well covered. Reheat on a baking tray at 180°C (355°F) for 15 to 20 minutes until piping hot and the pastry is crisp again.
