Eid Baklava Tray (Filo Pastry with Walnuts and Citrus Syrup)

Baklava is a layered filo pastry served across Turkey and the wider Middle East, especially for celebrations such as Eid, where its neat diamond pieces make it ideal for sharing. Thin sheets of pastry are buttered and stacked around a spiced walnut filling, then baked until crisp and deeply golden before being soaked with fragrant syrup. Here, lemon and orange blossom water give the sweetness a clean citrus lift, while the resting time allows the syrup to settle through the cut layers without softening the top completely. The result is glossy, crisp-edged, nutty and aromatic, with enough structure to slice cleanly for a festive tray.

Why this recipe works

  • Crisp, layered pastry: Brushing each filo sheet with butter helps the layers separate and bake into a flaky, golden top.
  • Fragrant nut filling: Walnuts, cinnamon, lemon and orange blossom water create a balanced filling with warmth, citrus and floral sweetness.
  • Designed to rest: The baklava needs time after baking for the syrup to absorb fully, making it well suited to preparing before serving.

Timing notes

  • Allow the syrup to settle: Leave the tray for at least 2 hours before serving so the syrup reaches the lower layers and the pieces hold their shape.
  • Best texture: Baklava is usually at its best once fully cooled and absorbed, rather than straight from the oven.

Texture tips

  • Keep the top crisp: Pour the syrup slowly along the cut lines so it travels through the pastry instead of pooling heavily on the surface.
  • Bake until deeply coloured: A pale tray will taste under-baked; look for an even, deep golden finish before adding the syrup.

Ingredient notes

  • Walnuts or pistachios: Walnuts give a rich, slightly earthy filling, while pistachios make a sweeter, more traditional-looking variation.
  • Handling filo: Keep unused filo covered as you work; exposed sheets dry quickly and can crack when layered.
  • Orange blossom water: Use it sparingly and tastefully: it should perfume the syrup, not overpower the nuts and butter.

Authenticity notes

  • Celebration sweet: Baklava is widely served for festive occasions across Turkish and Middle Eastern food traditions, including Eid gatherings.
  • Nut variations: Walnut, pistachio and mixed-nut fillings are all common, with the choice often reflecting local preference and availability.

  1. Heat the oven to 170°C (340°F). Melt the butter in a saucepan over low heat, then keep it warm so it stays fluid.
  2. Make the filling: finely chop the walnuts, then mix with the caster sugar and ground cinnamon in a bowl. Set aside.
  3. Brush a baking dish generously with melted butter. Lay in a sheet of phyllo dough and brush lightly with butter; repeat to build about 10 layers, keeping the remaining phyllo covered with a clean tea towel as you work.
  4. Scatter over about one third of the walnut filling in an even layer. Add 5 more buttered phyllo layers, then repeat the filling and layering twice more, finishing with 10 buttered phyllo layers on top.
  5. Using a sharp knife, cut the baklava into diamond shapes, cutting all the way through to the base. Brush the top with a final light coat of butter.
  6. Bake for 55 to 65 minutes until deeply golden and crisp, rotating the dish halfway through for even colour. While it bakes, make the syrup.
  7. Put the caster sugar and water in a saucepan. Peel wide strips of lemon zest into the pan, then squeeze in the lemon juice; simmer for 10 to 12 minutes until slightly thickened, then stir in the orange blossom water and take off the heat.
  8. As soon as the baklava comes out of the oven, slowly pour the warm syrup evenly over the hot pastry. Leave at room temperature for at least 2 hours so the syrup fully absorbs, then re-cut along the lines and serve.

Recipe notes

Tips

  • For the cleanest diamond cuts, score the top layers first, then press the knife straight down to the base in one firm motion.
  • Pour the syrup slowly and evenly, focusing on the cut lines so it travels down through the layers without making the top soggy.
  • If serving to vulnerable groups, use pasteurised butter and ensure the baklava is baked until deeply golden and piping hot throughout.

Substitutions

  • Replace Orange Blossom Water with rose water for a more floral, perfumed syrup.
  • Replace Walnuts with pistachios for a more traditional green nut filling and a slightly sweeter finish.

Storage

  • Refrigerate up to 5 days
  • Store covered at cool room temperature for up to 3 days for the best texture, or refrigerate for up to 5 days. To refresh, warm in a 160°C (320°F) oven for 8 to 10 minutes. Freeze in a single layer until firm, then pack airtight for up to 2 months; thaw at room temperature.
