Sfiha (Open-Faced Lamb Pies)
Why this recipe works
- Classic open-faced shape: Rolling the dough into small rounds gives each pie a browned edge while leaving the lamb topping exposed to cook quickly.
- Balanced lamb topping: Onion, tomato, lemon, cumin and allspice season the minced lamb with savoury depth and a bright, tangy finish.
- Good for sharing: The small individual pies are easy to serve warm as part of a spread, snack table or casual meal.

Authenticity notes
- Levantine-style pies: Sfiha are closely associated with Levantine and broader Middle Eastern baking, with regional versions varying in shape, spice blend and meat choice.
- Lamb or beef: Lamb gives a fuller, more traditional savoury flavour, while minced beef is a common milder alternative.
- Serve with lemon: Fresh lemon wedges are more than a garnish; the acidity lifts the richness of the meat and sharpens the spices.
Timing notes
- Let the dough double: The first rise gives the dough enough structure and lightness to bake up tender rather than dense.
- Rest before rolling: A short rest after dividing relaxes the gluten, making the rounds easier to roll without springing back.
- Best served warm: Allow the pies to rest briefly after baking, then serve while the bread is still soft and the topping is juicy.
Texture tips
- Use hot trays: Preheated baking trays help the dough brown quickly underneath, giving the pies a better base and lightly crisp edges.
- Keep the topping thin: A thin, even layer of lamb mixture cooks in the same time as the dough and prevents the centre becoming heavy.
- Do not overwork the shaped rounds: Once the dough has rested, roll gently and avoid excessive flour so the baked pies stay soft rather than tough.
Make-ahead tips
- Prepare the topping ahead: The lamb mixture can be mixed in advance and kept refrigerated until needed; keep it cold and use it promptly.
- Freeze baked pies: Cool completely, freeze in a single layer, then transfer to a bag or container for longer storage.
- Reheat on a tray: Reheat on a baking tray at 200°C (390°F) until piping hot so the dough revives without becoming soft and damp.

Instructions
- Put the flour, instant yeast and salt in a mixing bowl and whisk to combine. Add the olive oil and lukewarm water, then mix to a shaggy dough. Knead for 8 to 10 minutes until smooth and elastic.
- Lightly oil the bowl, return the dough, and cover. Leave in a warm place for 60 minutes, or until doubled in size.
- Meanwhile, grate the onion into a bowl and grate the tomatoes, then stir in the lemon juice. Add the minced lamb, cumin, allspice, black pepper, olive oil and salt, and mix well. Set aside for the flavours to meld while the dough finishes proving.
- Heat the oven to 230°C (445°F) and set two baking trays inside to heat. Punch down the dough, then divide into 10 equal pieces and roll into balls. Cover and rest for 10 minutes so the dough relaxes.
- On a lightly floured surface, roll each ball into a 10 to 12 cm round, keeping the centre slightly thicker than the edges. Spoon a thin layer of the lamb mixture over each round, leaving a 1 cm border. Work quickly so the dough does not overproof.
- Carefully place the pies onto the hot trays and bake for 10 to 12 minutes, rotating the trays halfway, until the edges are browned and the topping is cooked through. Rest for 5 minutes before serving warm. Cut the remaining lemon into wedges for squeezing at the table.

Tips
- For the best texture, keep the topping in a thin layer so it cooks through in the time the dough browns.
- If the dough springs back when rolling, let it rest for 5 minutes, then roll again.
- Food safety: if serving to pregnant people, young children, older adults, or anyone immunocompromised, make sure the lamb is cooked until piping hot throughout.
Substitutions
- Replace Minced lamb with minced beef for a milder flavour.
- Replace Allspice with ground cinnamon for a warmer, sweeter spice note.
- Replace Olive oil with vegetable oil in the dough and topping.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in an airtight container. Reheat on a baking tray at 200°C (390°F) for 8 to 10 minutes until piping hot. Freeze in a single layer, then bag; reheat from frozen at 200°C (390°F) for 12 to 15 minutes.
