Modern Menemen Shakshuka (Baked Eggs with Spiced Tomatoes)
Why this recipe works
- Built-in depth: Cooking the onion and pepper until very tender gives the tomato base sweetness and body before the spices go in.
- Bright but rounded: Ripe tomatoes bring acidity, while olive oil, softened vegetables and feta keep the sauce savoury and balanced.
- Fast, practical cooking: The sauce comes together on the hob, then the eggs finish in the oven for an easy, hands-off final stage.

Timing notes
- Serve straight away: The eggs are best eaten as soon as the whites are set; they will continue to firm up in the hot sauce.
- Egg timing matters most: Start checking early if you prefer softer yolks, as the difference between runny and fully set is only a few minutes.
Make-ahead tips
- Make the base ahead: The tomato and pepper sauce can be cooked in advance, chilled, then reheated gently before adding fresh eggs.
- Add eggs just before baking: For the best texture, do not bake the eggs until you are ready to serve.
Adjust the heat
- Keep it gentle: Use less Aleppo pepper for a softer warmth while keeping the cumin for savoury depth.
- Add more warmth: Increase the Aleppo pepper or finish with a pinch more at the table for a livelier heat.
Ingredient notes
- Use ripe tomatoes: Ripe tomatoes break down more readily and give the sauce a fresher, fuller flavour.
- Aleppo pepper profile: Aleppo pepper gives mild heat with a fruity, rounded flavour, making it well suited to eggs and tomatoes.
- Feta adds the finish: A crumbly, salty feta gives contrast to the soft eggs and sweet tomato-pepper base.

Ingredients
Instructions
- Heat the oven to 200°C (390°F). Finely slice the onion and green pepper, roughly chop the tomatoes, and chop the parsley. Tear or slice the bread for serving.
- Set a large ovenproof frying pan over medium heat and add the olive oil. Cook the onion with a pinch of the fine sea salt for 5 minutes until softened, then add the green pepper and cook for 6 to 8 minutes until very tender and sweet.
- Stir in the ground cumin and Aleppo pepper for 30 seconds until fragrant. Add the tomatoes and the remaining fine sea salt, then simmer for 5 to 7 minutes until the tomatoes break down and the sauce thickens slightly.
- Make 4 small wells in the sauce and crack an egg into each. Transfer the pan to the oven and bake for 6 to 9 minutes, until the whites are set and the yolks are still a little soft.
- Crumble over the feta cheese and scatter with the parsley. Serve straight away with the crusty white bread for dipping into the sauce and eggs.
Recipe notes
Tips
- For softer eggs, start checking at 6 minutes and remove the pan as soon as the whites are opaque; the eggs will continue to set slightly from the heat of the sauce.
- If your frying pan is not ovenproof, tip the sauce into a baking dish before adding the eggs, then bake as directed.
- If serving anyone who is pregnant, elderly, or immunocompromised, cook the eggs until both whites and yolks are fully set.
Substitutions
- Replace Feta cheese with Goat cheese for a creamier, tangier finish.
- Replace Fresh parsley with Fresh mint for a brighter, more aromatic topping.
- Replace Crusty white bread with Pita bread for a softer, scoopable side.
Storage
- Refrigerate up to 2 days
- Cool, then refrigerate the tomato and pepper base in an airtight container for up to 2 days. Reheat gently in a frying pan until bubbling, then add fresh eggs and bake as directed; cooked eggs do not reheat well.
