Iftar Mezze Platter with Hummus, Baba Ganoush and Tabbouleh

An iftar mezze platter is a generous, shareable spread designed for breaking the fast with a mix of cool, creamy and fresh elements. Here, smooth chickpea hummus sits alongside smoky roasted aubergine baba ganoush, bright parsley-and-mint tabbouleh, warm pita and briny Kalamata olives. The combination works because each component brings a different texture and flavour: tahini richness, lemony sharpness, soft bread for scooping and a herbal salad to keep the platter lively. It is practical for serving family-style, easy to prepare in parts ahead of time, and flexible enough to sit at the centre of a light dinner or as part of a larger iftar meal.

Why this recipe works

  • Creamy, fresh and scoopable: Smooth hummus and soft baba ganoush sit alongside a parsley-heavy tabbouleh, giving the platter both richness and lift.
  • Balanced flavour: Tahini, lemon, garlic, cumin and olive oil repeat across the dips, while roasted aubergine, herbs and olives keep each element distinct.
  • Designed for sharing: Serving everything together with warm pita makes the meal flexible, easy to portion and suitable for a mixed table.

Make-ahead tips

  • Keep the elements separate: Store the hummus, baba ganoush and tabbouleh in separate airtight containers so the herbs stay brighter and the dips keep their texture.
  • Prepare the dips in advance: The hummus and baba ganoush can be made ahead and chilled, then loosened and seasoned to taste before serving.
  • Warm the pita last: Heat the pita just before serving so it stays soft and pliable for scooping.

Ingredient notes

  • Choose good aubergines: Use aubergines that feel heavy for their size and roast them until fully collapsed; undercooked flesh will taste firm rather than silky.
  • Use fresh herbs for tabbouleh: Fresh parsley and mint are essential here, giving the salad its clean, green flavour and light texture.
  • Adjust lemon at the end: Taste each component after mixing and add more lemon only as needed, especially if the tahini is naturally bitter or rich.

Texture tips

  • For smoother hummus: Blend the chickpeas thoroughly, scraping down the bowl, and add water gradually until the dip is soft and creamy.
  • For creamier baba ganoush: Let the roasted aubergine cool slightly, then scoop only the tender flesh and mix until creamy while keeping a little natural texture.
  • Keep tabbouleh fresh: Cool the bulgur before tossing with the herbs and tomato so the salad stays bright rather than wilted.

Serving ideas

  • Finish with olive oil: A final swirl of extra virgin olive oil over the dips adds gloss and ties the platter together.
  • Add extra vegetables: Cucumber, radishes or crisp lettuce leaves work well alongside the pita for lighter scooping.
  • Build the platter just before serving: Arrange the warm bread, dips, salad and olives at the last moment so the pita stays warm and the herbs look fresh.

  1. Heat the oven to 230°C (445°F). Prick the aubergines all over with a fork, set on a baking tray, and roast for 30 to 35 minutes until collapsed and very soft. Leave until cool enough to handle.
  2. Meanwhile, put the bulgur in a saucepan with the water and a pinch of fine sea salt, then bring to the boil. Cover, turn the heat off, and leave for 12 minutes until tender. Fluff with a fork and spread out to cool slightly.
  3. Drain the canned chickpeas, reserving a few for garnish if you like. In a food processor, blend the chickpeas with tahini, the juice of 1 lemon, 1 clove garlic, ground cumin, fine sea salt, black pepper, extra virgin olive oil, and water until very smooth. Taste and adjust with a little more lemon juice or salt if needed.
  4. Split the roasted aubergines and scoop the flesh into a bowl, leaving behind any very charred skin. Stir in tahini, the juice of 1 lemon, 1 clove garlic, ground cumin, fine sea salt, black pepper, and extra virgin olive oil until creamy with a little texture. Taste and adjust seasoning.
  5. Dice the tomato, then finely chop the fresh parsley and fresh mint. Toss with the cooled bulgur, extra virgin olive oil, the juice of 1 lemon, fine sea salt, and black pepper until bright and well balanced. Let it sit for 5 minutes so the flavours meld.
  6. Warm the pita bread in the oven for 3 to 4 minutes, just until soft and heated through. Spoon the hummus and baba ganoush into bowls or directly onto a platter, and swirl the tops with the back of a spoon. Arrange the tabbouleh, black Kalamata pitted olives, and warm pita alongside, then serve straight away.

Recipe notes

Tips

  • For extra-smooth hummus, blend for a full 2 minutes, scrape down the bowl, then blend again; add a splash more water only if needed to loosen.
  • If you want a smokier baba ganoush, roast the aubergines until the skins are deeply browned and the flesh is completely soft before mixing.
  • If serving to anyone vulnerable to foodborne illness, make sure the platter is kept out of the temperature danger zone; do not leave it at room temperature for more than 2 hours.

Substitutions

  • Replace bulgur with quinoa for a gluten-free tabbouleh-style salad.
  • Replace black Kalamata pitted olives with green pitted olives for a milder, fruitier bite.
  • Replace ground cumin with ground coriander for a softer, citrusy spice note.

Storage

  • Refrigerate up to 3 days
  • Store hummus, baba ganoush, and tabbouleh in separate airtight containers in the fridge. Warm pita bread fresh; if you have leftovers, reheat in a 180°C (355°F) oven for 3 to 5 minutes until piping hot.
