Lamb Kofta Platter with Tahini Lemon Sauce and Salad
Why this recipe works
- Layered savoury flavour: Cumin, coriander, garlic, onion and parsley season the lamb throughout rather than just on the surface.
- Fresh balance: Lemon, tomato and cucumber cut through the richness of the lamb and tahini sauce.
- Good kofta texture: Mixing the lamb until tacky helps the kofta bind to the skewers and cook up juicy rather than crumbly.

Texture tips
- Help the kofta hold together: Squeeze the grated onion thoroughly before mixing so excess moisture does not loosen the lamb mixture.
- Keep the lamb juicy: Turn the skewers regularly over medium-high heat so the outside browns before the inside dries out.
- Loosen the tahini gradually: If the sauce thickens or seizes after adding lemon, stir in water little by little until it becomes pourable.
Ingredient notes
- Grated onion matters: Finely grating the onion distributes flavour evenly through the lamb, while squeezing it keeps the mixture manageable.
- Use fresh herbs: Fresh parsley gives the kofta a cleaner, brighter flavour than dried herbs, and fresh mint can be used for a more aromatic variation.
- Choose ripe tomatoes: Ripe tomatoes give the salad better sweetness and acidity, which is important against the richness of the lamb.
Make-ahead tips
- Shape ahead: The kofta can be mixed and shaped in advance, then kept chilled until ready to grill.
- Keep the platter fresh: Store cooked kofta, tahini sauce and salad separately; the salad is best made close to serving for a crisp texture.
- Reheat properly: Warm cooked kofta on a hot grill or in a 200°C (390°F) oven until piping hot throughout.
Serving ideas
- Add a grain or dip: Serve with rice, couscous, hummus or baba ganoush if you want to make the platter more substantial.
- Finish with freshness: Extra parsley, mint or a final squeeze of lemon gives the platter a brighter finish just before serving.
- Serve sauce on the side: Offering the tahini lemon sauce separately keeps the flatbreads from softening and lets everyone add their preferred amount.

Instructions
- If using wooden skewers, soak them in water for 20 minutes. Finely grate the onion, then squeeze out as much liquid as you can. Finely grate the garlic and finely chop the parsley.
- In a mixing bowl, combine the lamb, onion, garlic, parsley, cumin, coriander, salt and pepper. Mix vigorously for 1 to 2 minutes until the mixture becomes tacky and holds together well. Divide into 8 portions and shape each around a skewer into a long, even kofta.
- Heat a grill to medium-high and lightly oil the grates with a little of the olive oil. Grill the kofta for 8 to 10 minutes, turning every couple of minutes, until browned and cooked through. Rest for 5 minutes.
- Meanwhile, dice the tomatoes and cucumber and put them in a bowl. Dress with the remaining olive oil and a squeeze of lemon juice, then season with a pinch of salt and pepper to taste. Set aside so the flavours mingle.
- Make the tahini sauce: in a small bowl, stir the tahini with 2 to 3 tbsp lemon juice and 2 to 4 tbsp water until smooth and pourable. Season with a pinch of salt and pepper to taste. Warm the naan briefly on the grill, then serve everything together as a platter.
Recipe notes
Tips
- Squeezing the grated onion well keeps the kofta juicy but helps them hold together on the skewers.
- If the tahini sauce seizes when you add lemon, keep stirring and loosen gradually with water until silky.
- For food safety, make sure the lamb is cooked through and piping hot before serving.
Substitutions
- Replace Fresh parsley with Fresh mint for a fresher, more aromatic kofta.
- Replace Naan bread with Pita bread for a more traditional pocket-style flatbread.
Storage
- Refrigerate up to 3 days
- Cool the kofta quickly, then refrigerate in a sealed container for up to 3 days. Reheat on a hot grill or in a 200°C (390°F) oven until piping hot. Freeze cooked kofta for up to 2 months; defrost overnight in the fridge before reheating. Keep the salad and tahini sauce separate and make the salad fresh for best texture.
