Pollo en Salsa de Tamarindo (Tamarind Chicken)
Why this recipe works
- Layered sauce: Tamarind brings sharp fruitiness, chipotle adds smoke and heat, and brown sugar rounds the sauce without making it overly sweet.
- Built in one pot: Browning the chicken first leaves savoury bits in the Dutch oven, which dissolve into the sauce as it simmers.
- Glossy finish: Reducing the sauce after the chicken cooks gives it a thick, lacquered texture that clings well to the thighs.

Adjust the heat
- For less heat: Use less chipotle sauce and lean on the lime at the end to keep the sauce lively rather than heavy.
- For more heat: Increase the chipotle sauce gradually, tasting as the sauce reduces so the smokiness does not overwhelm the tamarind.
- Keep the balance: If the sauce tastes too sharp or hot, a little extra sweetness can soften the edges without muting the flavour.
Ingredient notes
- Tamarind paste: Tamarind pastes vary in strength and sweetness, so taste the sauce before the final reduction and adjust with lime or sweetness as needed.
- Chipotle sauce: Chipotle gives the sauce its smoky backbone; choose a sauce with good depth rather than only sharp chilli heat.
- Lime at the end: Adding lime juice and zest after reducing the sauce keeps the citrus flavour bright and fresh.
Texture tips
- Gentle simmering: Keep the sauce at a low simmer once the chicken goes back in; boiling too hard can make the meat tighten.
- Smooth reduction: Reduce the sauce uncovered over medium heat and stir occasionally so it thickens evenly into a glaze.
- Watch leaner cuts: If using chicken breast cutlets, shorten the simmer and remove them as soon as they are cooked through to avoid dryness.
Make-ahead tips
- Make ahead: The chicken and sauce can be cooked in advance, cooled completely and refrigerated in a sealed container.
- Reheat gently: Warm the chicken slowly in a saucepan with a splash of stock until piping hot, loosening the sauce if it has thickened.
- Keep tortillas separate: Store and warm the corn tortillas separately so they stay pliable rather than soaking up the sauce.

Ingredients
Instructions
- Finely slice the yellow onion and thinly slice the garlic. Zest the lime, then juice it.
- Heat the vegetable oil in a Dutch oven over medium-high heat. Season the chicken thighs lightly with salt and black pepper, then brown skin-side down until deeply golden, 6 to 8 minutes; turn and brown the other side for 3 to 4 minutes. Transfer to a plate.
- Reduce the heat to medium and add the onion to the pot. Cook, stirring, until softened and lightly golden, 5 to 6 minutes. Add the garlic and cook for 30 to 60 seconds until fragrant.
- Stir in the tamarind paste, chipotle sauce and brown sugar until the sugar dissolves. Pour in the chicken stock and scrape up any browned bits from the base of the pot. Bring to a gentle simmer.
- Return the chicken thighs to the pot, nestling them into the sauce. Cover and simmer gently for 18 to 22 minutes, turning once, until the chicken is cooked through and tender. Uncover for the last few minutes if you want the skin to stay less soft.
- Lift the chicken out to a plate, then simmer the sauce uncovered over medium heat for 5 to 8 minutes until glossy and thick enough to coat the back of a spoon. Stir in the lime juice and lime zest, then return the chicken and turn to coat. Taste and adjust with a little more lime juice if you want it sharper.
- Warm the corn tortillas in a dry pan or directly over a low flame, turning until pliable. Serve the chicken with plenty of sauce, and finish with roasted sesame seeds.

Serving suggestions
This recipe pairs well with:
Tips
- Keep the simmer gentle so the sauce reduces without splitting and the chicken stays juicy.
- If you are serving vulnerable groups, make sure the chicken is cooked until piping hot throughout with no pink at the bone.
- For a smoother glaze, whisk the tamarind paste with a splash of the chicken stock in a bowl before adding it to the pot.
Substitutions
- Replace brown sugar with honey for a rounder sweetness.
- Replace chicken thighs with chicken breast cutlets, but reduce the covered simmer to 10 to 12 minutes to avoid drying out.
- Replace chipotle sauce with chili crisp for a punchier heat and texture.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container for up to 3 days. Reheat gently in a saucepan with a splash of chicken stock until piping hot; warm the corn tortillas separately. Freeze the chicken and sauce (not the tortillas) for up to 2 months, then defrost overnight in the fridge before reheating.
