Pasta alla Nerano Verde (Spaghetti with Courgette, Basil and Parmigiano)
Why this recipe works
- Creamy without cream: Fried courgettes blend into a smooth base, while starchy pasta water and cheese create a glossy sauce that clings to the spaghetti.
- Layered savoury flavour: Golden courgettes, garlic-scented oil, fresh basil and Parmigiano build richness without making the dish feel heavy.
- Soft sauce, tender courgettes: Blending most of the courgettes gives the sauce body, while folding in the remaining rounds keeps some sweetness and texture.

Ingredient notes
- Choose firm courgettes: Firm, medium-sized courgettes slice cleanly and fry evenly; very large ones can be watery and more seedy.
- Use a savoury grating cheese: Parmigiano adds depth and helps the sauce emulsify. Pecorino gives a sharper, saltier finish if preferred.
- Protect the basil: Warm the blended sauce gently so the basil stays bright and fresh rather than turning dull.
Texture tips
- For a silkier sauce: Add the pasta water gradually while tossing vigorously; the starch helps the courgette purée and cheese coat each strand.
- Keep some courgettes whole: Folding in reserved fried courgette rounds at the end gives the pasta a softer, more rustic texture contrast.
- Keep the heat low: Once the purée is in the pan, gentle heat helps the cheese melt smoothly instead of separating.
Timing notes
- Most of the work is frying: Slicing and frying the courgettes takes the bulk of the active time; the final toss with pasta and cheese is quick.
- Serve straight away: The sauce is glossiest just after tossing, before the pasta absorbs too much moisture.
- Best freshly made: Leftovers can be reheated gently, but the basil colour and silky texture are at their best on the day it is cooked.
Authenticity notes
- Campanian inspiration: Pasta alla Nerano is associated with Nerano on the Sorrento peninsula, where fried courgettes, pasta and cheese are the defining elements.
- Verde-style sauce: Blending the courgettes with basil creates a smoother, greener version rather than a more rustic courgette-and-cheese emulsion.

Ingredients
Instructions
- Slice the courgettes into thin rounds, about 3 mm thick. Pour the olive oil into a large frying pan and set over medium-high heat. Lightly crush the garlic cloves with the side of a knife.
- Fry the courgettes in batches until deeply golden and tender, turning once, 3 to 5 minutes per batch. Add the garlic for the last 1 minute of the final batch so it perfumes the oil without burning. Transfer the courgettes and garlic to a bowl, leaving the oil in the pan.
- Bring a large pot of water to the boil and season it with most of the fine sea salt. Cook the spaghetti until just shy of al dente. Reserve 200 ml of the pasta water, then drain.
- Put about three-quarters of the fried courgettes into a blender with the basil and half the parmesan. Add 100 ml of the reserved pasta water and blend until very smooth and bright green. Taste and add a pinch of the remaining salt if needed.
- Warm the courgette purée in the frying pan over low heat, loosening with a splash more pasta water until glossy. Add the spaghetti and toss vigorously with tongs for 1 to 2 minutes, adding pasta water a little at a time so the sauce clings to the strands. Fold in the remaining fried courgettes and remove from the heat.
- Add the remaining parmesan and toss again until creamy and emulsified. Finish with the black pepper and a final drizzle of the courgette-scented oil from the pan. Serve straight away while the pasta is silky.
Recipe notes
Tips
- Keep the heat low once the purée hits the pan; high heat can dull the basil’s colour and split the sauce.
- For the glossiest finish, toss the pasta hard and add pasta water gradually until the sauce looks creamy and coats each strand.
- If serving anyone who is vulnerable to foodborne illness, make sure the pasta is cooked piping hot and serve immediately.
Substitutions
- Replace spaghetti with linguine for a similar bite and sauce cling.
- Replace parmesan with pecorino romano for a sharper, saltier finish.
- Replace fresh basil with fresh flat-leaf parsley for a greener, more peppery herb note.
Storage
- Refrigerate up to 2 days
- Cool quickly, cover and refrigerate. Reheat gently in a frying pan with a splash of water or a little olive oil, tossing until piping hot and glossy; avoid high heat to prevent the sauce splitting.
