Pasta e Fagioli Napoletana (Neapolitan Pasta and Bean Soup)
Why this recipe works
- Naturally creamy: The pasta cooks in the soup, so its starch thickens the broth and gives the beans a rounded, creamy finish.
- Simple ingredients, deep flavour: Slowly softened onion, celery, garlic, rosemary and tomato create a savoury base before the beans and stock are added.
- One-pot method: Everything cooks in the same pot, reducing washing-up while allowing the pasta, beans and broth to absorb each other’s flavour.

Authenticity notes
- Neapolitan style: Neapolitan pasta e fagioli is typically thick rather than brothy, with the pasta cooked directly in the bean base.
- Home-style serving: It is commonly served as a hearty bowlful rather than a light starter, finished simply with good olive oil.
Texture tips
- For a creamier soup: Mash some of the borlotti beans against the side of the pot before adding the pasta.
- If it thickens too much: Loosen the soup gradually with hot water while the pasta finishes cooking, stirring well to keep the base even.
Common mistakes
- Letting the base catch: Once the pasta goes in, stir often and scrape the base of the pot, as the starch-rich soup can stick.
- Overcooking the pasta: Stop when the ditalini is al dente; it will continue softening slightly as the soup rests.
Make-ahead tips
- Reheating: Reheat gently in a saucepan with a splash of water, stirring often, until piping hot.
- Best texture: The soup is at its best on the day it is made, before the pasta absorbs too much of the broth.

Ingredients
Instructions
- Set a large pot over medium heat and add 2 tbsp of the extra virgin olive oil. Finely chop the yellow onion and celery, then add them to the pot with a pinch of the fine sea salt. Cook for 8 to 10 minutes, stirring, until softened and sweet but not browned.
- Thinly slice the garlic and add it to the pot with the fresh rosemary sprigs. Cook for 1 minute until fragrant, stirring so the garlic does not colour.
- Roughly chop the tomato and stir it in with the black pepper and the remaining fine sea salt. Cook for 8 to 10 minutes, stirring occasionally, until the tomatoes break down into a thick, jammy base.
- Stir in the borlotti beans, then pour in the vegetable stock. Bring to a gentle simmer and cook for 10 minutes so the flavours meld.
- Add the ditalini and simmer, stirring often, until the pasta is al dente and the soup is thick and creamy, 10 to 12 minutes. If it becomes too thick before the pasta is cooked, loosen with a splash of hot water from the kettle and keep simmering.
- Remove the rosemary sprigs, then take the pot off the heat and let the soup stand for 3 to 5 minutes to settle and thicken. Ladle into bowls and finish with the remaining 1 tbsp extra virgin olive oil.
Recipe notes
Tips
- Stir frequently once the ditalini goes in, especially around the base of the pot, as pasta thickens the soup and can catch.
- For an even silkier texture, mash a few spoonfuls of the borlotti beans against the side of the pot before adding the pasta.
- If cooking for anyone vulnerable, make sure the soup is simmered properly and served piping hot.
Substitutions
- Replace ditalini with orzo for a similar small-pasta texture; start checking for doneness a couple of minutes earlier.
- Replace fresh rosemary with fresh thyme for a softer, more floral herb note.
- Replace tomato with canned chopped tomatoes for convenience; simmer a little longer to reduce to the same thickness.
Storage
- Refrigerate up to 3 days
- Cool, then refrigerate in an airtight container. The soup will thicken as it stands; reheat gently in a saucepan with a splash of water, stirring often, until piping hot.
