Goan Fish Curry with Coconut

Goan fish curry belongs to the coastal Indian tradition of light, coconut-based seafood curries, where tang, spice and fragrance are as important as richness. In this version, white fish cooks gently in a smooth tomato and coconut milk gravy sharpened with tamarind and scented with curry leaves, coriander, cumin, turmeric, ginger and garlic. The result is creamy without feeling heavy, with mild chilli warmth and a clean acidity that suits steamed rice particularly well. It is a practical dinner curry: quick enough for a weeknight, but distinctive enough to feel special.

Why this recipe works

  • Layered aromatics: Toasting coriander seeds and cooking the onion, garlic, ginger and spices before blending gives the sauce depth without a long simmer.
  • Clean tang: Tamarind and ripe tomato cut through the richness of the coconut milk, keeping the curry bright rather than heavy.
  • Smooth coconut gravy: Blending the cooked base creates a cohesive sauce that coats the fish gently as it cooks.

Adjust the heat

  • For a milder curry: Remove the seeds from the green chilli, or use a smaller piece and let the tamarind and curry leaves carry more of the flavour.
  • For more heat: Use a hotter green chilli or add an extra chilli when cooking the aromatics, keeping the sauce gently simmered afterwards.
  • Keep the chilli in balance: If the curry tastes too sharp or hot, soften it with a little extra coconut milk and adjust the salt at the end.

Ingredient notes

  • Choose firm white fish: Use skinless fillets that hold their shape well, so the pieces stay intact during the short simmer.
  • Curry leaves matter: Fresh curry leaves give the sauce its distinctive fragrance; if unavailable, the curry will still work but will taste less aromatic.
  • Tamarind adds the sour note: Tamarind paste provides the characteristic tang. Add it gradually if yours is particularly concentrated.

Make-ahead tips

  • Make the sauce ahead: Prepare the blended coconut-tamarind gravy in advance, then cool and refrigerate it until needed.
  • Add the fish just before serving: For the best texture, bring the sauce back to a gentle simmer and cook the fish only when you are ready to eat.
  • Reheat gently: Warm leftovers over low heat until piping hot, stirring carefully and avoiding a hard boil so the coconut sauce stays smooth.

  1. Thinly slice the onion. Peel the garlic and ginger, then roughly chop them; slit the green chilli. Cut the fish into large chunks and season with 0.5 tsp of the fine sea salt.
  2. Heat the coconut oil in a saucepan over medium heat. Add the coriander seeds and toast for 30 to 45 seconds until fragrant, then add the onion and cook for 6 to 8 minutes until softened and lightly golden.
  3. Add the garlic, ginger and green chilli and cook for 1 minute. Stir in the ground cumin and ground turmeric for 30 seconds, then add the tomatoes and cook for 5 to 6 minutes until broken down and jammy.
  4. Tip the mixture into a blender and blend until smooth, then return it to the pan. Add the curry leaves, tamarind paste, coconut milk, water and the remaining salt, and bring to a gentle simmer.
  5. Slide in the fish and simmer gently for 6 to 8 minutes, turning once, until the fish is opaque and flakes easily. Rest off the heat for 2 minutes so the flavours settle, then serve hot.

Serving suggestions

This recipe pairs well with:

Steamed rice

Tips

  • Keep the curry at a gentle simmer once the coconut milk is added; a hard boil can cause it to split.
  • If you are sensitive to heat, remove the seeds from the green chilli before cooking.
  • For vulnerable groups, ensure the fish is cooked until piping hot throughout and flakes easily.

Substitutions

  • Replace Coconut oil with Olive oil for a less coconut-forward base.
  • Replace Tamarind paste with Apple-cider-vinegar for a simpler tang (start with half the amount, then adjust to taste).
  • Replace Green chili pepper with Red-chili-pepper for a slightly fruitier heat.

Storage

  • Refrigerate up to 2 days
  • Cool quickly, then refrigerate in a sealed container. Reheat gently in a saucepan over low heat until piping hot, stirring often; avoid boiling to keep the coconut gravy smooth.
