Skillet Cornbread-Topped Turkey Casserole
Why this recipe works
- Saucy filling, tender topping: The lightly thickened turkey and corn filling stays moist beneath a soft cornbread layer that bakes to a golden finish.
- Built-in savoury depth: Softened onion, browned turkey, smoked paprika, stock and cheddar give the casserole warmth and richness without a long cook.
- Skillet-to-oven cooking: Using a cast-iron pan lets the filling cook on the hob before the topping is added and baked in the same vessel.
- Comforting but balanced: Sweetcorn, buttermilk cornbread and savoury turkey make the dish hearty without feeling overly heavy.

Timing notes
- Let it rest before serving: Resting for 10 minutes helps the filling settle and thicken, making the casserole easier to spoon from the pan.
- Most work happens early: The active cooking is mainly chopping, browning and mixing; once topped, the oven does the remaining work.
- Best served hot: Serve after the resting time while the filling is still bubbling-hot and the cornbread topping is freshly set.
Common mistakes
- Overmixing the batter: Stir the cornbread batter only until combined; a few small lumps are fine and help keep the topping tender.
- Letting the filling get too thick: The turkey mixture should look saucy before the topping goes on, as it will thicken further while baking and resting.
- Not checking the centre: Bake until the cornbread is fully set and the filling is bubbling around the edges, not just until the top looks golden.
Make-ahead tips
- Make the filling ahead: The turkey filling can be cooked in advance, cooled and refrigerated, then topped with freshly mixed cornbread before baking.
- Reheat gently: Reheat covered in a 180°C (355°F) oven until piping hot, uncovering near the end if the topping needs refreshing.
- Freezes in portions: Cool completely before freezing portions well wrapped, then defrost overnight in the fridge before reheating.
Serving ideas
- Add something fresh: A crisp green salad, slaw or steamed greens balances the richness of the cheddar cornbread topping.
- Serve with a sharp sauce: A spoonful of yoghurt, sour cream or a little hot sauce works well alongside the smoky, savoury filling.

Instructions
- Heat the oven to 200°C (390°F). Finely chop the onion and grate the cheddar cheese.
- Heat the olive oil in a 25 cm cast-iron frying pan over medium heat. Add the onion and cook for 6 to 8 minutes, stirring, until softened and lightly golden.
- Add the minced turkey, smoked paprika, fine sea salt and black pepper. Cook for 6 to 8 minutes, breaking it up with a spoon, until the turkey is no longer pink.
- Sprinkle over 1 tbsp plain flour and stir for 1 minute. Pour in the chicken stock and bring to a simmer, scraping up any browned bits, then cook for 3 to 4 minutes until slightly thickened.
- Stir in the sweet corn kernels and take the pan off the heat. The filling should look saucy and gently bubbling; if it seems very thick, stir in a splash more stock from the measured amount before topping.
- In a mixing bowl, whisk together the cornmeal, 120 g plain flour and baking powder. In a jug, whisk the buttermilk and egg, then pour into the dry ingredients and stir just until combined.
- Stir most of the cheddar cheese into the batter, reserving a small handful for the top. Spoon the batter over the turkey filling and gently spread it to the edges, then scatter over the reserved cheese.
- Bake for 25 to 30 minutes, until the cornbread is set and golden and the filling is bubbling around the edges. Rest for 10 minutes before serving so the filling thickens slightly.

Tips
- For the best rise, avoid overmixing the cornbread batter; a few small lumps are fine.
- If your cast-iron pan is smaller than 25 cm, bake the filling and topping in a baking dish instead to prevent overflow.
- If serving vulnerable groups, make sure the turkey is cooked through and piping hot before baking, and serve the casserole hot.
Substitutions
- Replace Cheddar cheese with Gruyere cheese for a nuttier topping.
- Replace Smoked paprika with Sweet paprika for a milder, less smoky flavour.
- Replace Buttermilk with Kefir for a similar tang and tender crumb.
Storage
- Refrigerate up to 3 days
- Cool completely, then cover and refrigerate for up to 3 days. Reheat in a 180°C (355°F) oven for 20 to 25 minutes until piping hot; cover loosely if the top is browning too quickly. Freeze portions well wrapped for up to 2 months and defrost overnight in the fridge before reheating.
