Pea and Ham Soup with Crusty Bread
Why this recipe works
- Naturally thick texture: Split peas soften and collapse during simmering, giving the soup body without needing cream or flour.
- Deep savoury flavour: The smoked ham hock seasons the broth as it cooks, adding saltiness, smokiness and richness throughout the soup.
- Ideal for making ahead: The soup reheats well and can be loosened with extra stock if it thickens after chilling or freezing.

Timing notes
- Cook until the peas collapse: The soup is ready when the split peas have broken down and the texture is thick enough to coat a spoon.
- Let the ham cool briefly: Allow the ham hock to cool just enough to handle before shredding, so the meat separates cleanly from the bone and skin.
Ingredient notes
- Use a bone-in smoked ham hock: The bone and connective tissue help build a fuller broth, while the smoked meat gives the soup its recognisable savoury depth.
- Season after shredding: Ham hocks vary in saltiness, so taste and adjust the seasoning only after the meat has been returned to the pot.
- Rinse the split peas: Rinsing the peas before cooking removes surface starch and any dusty residue, helping the broth stay cleaner as it simmers.
Texture tips
- For a thicker soup: Simmer a little longer with the lid partly off, stirring often towards the end as the peas become dense.
- For a looser consistency: Warm through with a splash of stock until the soup returns to a spoonable but not stodgy texture.
- Avoid catching on the base: Once the soup thickens, keep the heat gentle and stir more frequently to stop the peas sticking to the bottom of the pot.
Make-ahead tips
- Good for batch cooking: Cool the soup quickly, then refrigerate in a sealed container for up to 3 days.
- Freeze after cooking: Freeze in portions for up to 3 months, then defrost overnight in the fridge before reheating.
- Reheat gently: Warm in a saucepan, stirring often and adding a little stock if needed, until piping hot throughout.

Ingredients
Instructions
- Peel and finely chop the onion. Peel the carrots and cut into small dice so they soften at the same rate as the peas.
- Put the onion, carrots, split peas, smoked ham hock and bay leaves into a large pot. Pour in the chicken stock and bring to the boil over high heat, skimming off any foam that rises.
- Turn the heat down to a gentle simmer and cook, partially covered, for 75 to 85 minutes, stirring occasionally, until the peas have broken down and the soup is thick and spoonable. If it starts to catch on the bottom, lower the heat and stir more often.
- Lift out the ham hock and leave it until cool enough to handle. Shred the meat, discarding skin and bone, then return the meat to the pot.
- Season with fine sea salt and black pepper, then simmer for 2 to 3 minutes so the flavours settle. Ladle into bowls and serve with slices of crusty white bread for dunking.
Recipe notes
Tips
- Rinse the split peas in a sieve under cold water until the water runs mostly clear to keep the broth cleaner.
- If the soup becomes too thick, loosen it with a splash of chicken stock and warm gently until piping hot.
- If serving vulnerable people, ensure the soup is simmered until the ham is fully cooked and the soup is piping hot throughout.
Substitutions
- Replace Chicken stock with Vegetable stock for a lighter, less meaty base.
- Replace Crusty white bread with Country bread for a sturdier slice that holds up well for dunking.
Storage
- Refrigerate up to 3 days
- Cool quickly, then refrigerate in a sealed container for up to 3 days. Reheat gently in a saucepan, stirring often, adding a little chicken stock if needed, until piping hot; freeze for up to 3 months and defrost overnight in the fridge before reheating.
