Côtelettes d’Agneau Persillées (Lamb Cutlets with Parsley and Garlic Butter)
Why this recipe works
- Fast cooking: Rib cutlets cook quickly in a hot pan, making this a practical dinner with very little active time.
- Rich but balanced: Lemon and Dijon cut through the butter and lamb fat, keeping the sauce bright rather than heavy.
- Simple, aromatic finish: Parsley and garlic are added through the butter at the end, so their flavour stays fresh and fragrant.

Ingredient notes
- Choose even cutlets: Similar-sized rib cutlets will cook at the same pace, which helps avoid one chop overcooking while another is still underdone.
- Use fresh parsley: Flat-leaf parsley gives the butter a clean, herbaceous flavour; dried parsley will not provide the same freshness.
- Add lemon to taste: A final squeeze of lemon should brighten the butter without overwhelming the lamb.
Texture tips
- Dry the chops well: Patting the lamb thoroughly dry helps the surface brown quickly instead of steaming in the pan.
- Rest briefly if preferred: A short rest before serving helps the juices settle while keeping the butter sauce warm enough to spoon over.
Common mistakes
- Watch the timing: Lamb cutlets are small and cook quickly, so check them early if you prefer them pink inside.
- Lower the heat for the butter: Add the parsley butter only after searing, then keep the heat low so the garlic and herbs do not scorch.
Make-ahead tips
- Make the herb butter ahead: The parsley, garlic, Dijon and lemon butter can be mixed in advance, then softened slightly before adding to the pan.
- Best served immediately: The cutlets are at their best straight from the pan, while the lamb is juicy and the butter sauce is still glossy.

Ingredients
Instructions
- Finely chop the parsley and crush the garlic. In a bowl, mash the butter with the parsley, garlic, Dijon mustard, a pinch of the salt and a squeeze of lemon until well combined. Cut the lemon into wedges and set aside.
- Pat the lamb chops dry, then season both sides with the remaining salt and the black pepper. Heat the olive oil in a frying pan over medium-high heat until shimmering.
- Sear the lamb chops for 2 to 3 minutes per side for medium-rare, or 3 to 4 minutes per side for medium, turning with tongs. If the pan starts to smoke, lower the heat slightly so the fat renders without burning.
- Reduce the heat to low and add the parsley butter to the pan. Turn the chops in the melting butter for 30 to 60 seconds, spooning it over the meat until glossy and fragrant. Remove from the heat and squeeze over a little lemon to taste.
- Serve straight away with the remaining lemon wedges, spooning any buttery juices from the pan over the chops. If you prefer, let the chops rest for 2 minutes before serving to keep them extra juicy.
Recipe notes
Tips
- For the best sear, make sure the lamb chops are thoroughly dry before they hit the hot oil.
- Keep the heat low once the butter goes in so it melts and foams without burning, which keeps the parsley tasting fresh.
- If serving anyone who is pregnant, elderly, or immunocompromised, cook the lamb until well done and piping hot throughout.
Substitutions
- Replace Fresh parsley with Fresh chives for a milder, oniony finish.
- Replace Dijon mustard with Whole-grain mustard for a coarser texture and gentler heat.
- Replace Butter with Ghee for a slightly nuttier flavour and a higher heat tolerance.
Storage
- Refrigerate up to 2 days
- Cool leftovers quickly, then refrigerate in a sealed container. Reheat gently in a frying pan over low heat with a splash of water until piping hot, or eat cold sliced into a salad; avoid high heat as the butter and herbs can scorch.
