Pollo en Pipián Verde (Chicken in Green Pumpkin Seed Sauce)

In Mexican cooking, pipián verde refers to a thick green sauce made with toasted pumpkin seeds, tomatillos, fresh herbs and chilli, valued for its nutty body and gentle tang. Here it coats bone-in chicken thighs as they simmer until tender, giving the sauce time to become glossy and spoonable without losing its fresh green character. The toasted seeds add richness, the tomatillos bring acidity, and coriander and lime keep the finish bright. Serve it with rice, warm tortillas or simple beans to catch the sauce, making it a satisfying dinner with enough depth for sharing.

Why this recipe works

  • Toasted, layered flavour: Toasting the pumpkin seeds before blending brings out their nutty depth and gives the sauce its distinctive pipián character.
  • Naturally thick sauce: Blended pumpkin seeds thicken the tomatillo sauce into a smooth, glossy coating without needing cream or flour.
  • Bright balance: Tomatillos and lime cut through the richness of the seeds, keeping the sauce fresh rather than heavy.

Adjust the heat

  • For gentler heat: Swap the serrano for jalapeño, or use less chilli and remove the seeds before simmering.
  • For more heat: Use an extra serrano or leave the seeds in, then adjust with lime and salt so the sauce stays balanced.

Ingredient notes

  • Use hulled pumpkin seeds: Choose green hulled pumpkin seeds, often labelled pepitas, so they blend smoothly into the sauce.
  • Fresh tomatillos matter: Fresh tomatillos give the sauce its sharp, green acidity; rinse them well after removing the husks to remove their sticky coating.
  • Blend until very smooth: A full blend gives pipián its characteristic velvety texture and helps the seeds fully thicken the sauce.

Texture tips

  • For a silkier sauce: Blend thoroughly and add a little stock only as needed to help the blades move without thinning the sauce too much.
  • For a spoon-coating finish: Let the sauce simmer uncovered at the end until it looks glossy and clings lightly to the chicken.

Make-ahead tips

  • Good the next day: The sauce develops deeper flavour after resting, making this a strong make-ahead dinner.
  • Reheat gently: Warm over low heat with a splash of stock, stirring occasionally, until the chicken is piping hot throughout.
  • Freezes well: Cool completely, freeze in a sealed container, then defrost in the fridge before reheating gently.

  1. Roughly chop the onion. Peel the garlic, trim the serrano peppers, and remove the husks from the tomatillos, then rinse the tomatillos well to remove any stickiness.
  2. Heat a dry frying pan over medium heat and toast the pumpkin seeds for 4 to 6 minutes, stirring often, until they start to pop and smell nutty. Tip them straight into a blender to cool slightly.
  3. In a large pot, heat the vegetable oil over medium-high heat. Add the chicken thighs and sear for 3 to 4 minutes per side until lightly golden, then transfer to a plate.
  4. Lower the heat to medium and add the onion to the pot with a pinch of the salt. Cook for 5 minutes until softened, then add the garlic and ground cumin and cook for 1 minute until fragrant.
  5. Add the tomatillos and serrano peppers, then pour in 250 ml of the chicken stock. Simmer for 8 to 10 minutes until the tomatillos are soft and dull green.
  6. Carefully pour the tomatillo mixture into the blender with the toasted pumpkin seeds. Add the fresh coriander and blend until very smooth, adding a splash more stock if needed to get it moving.
  7. Return the green sauce to the pot and stir in the remaining chicken stock and the remaining salt. Bring to a gentle simmer, then nestle the chicken back in and cook, partially covered, for 20 to 25 minutes until the chicken is tender and cooked through.
  8. Simmer uncovered for 5 minutes to thicken the pipián to a glossy, spoon-coating consistency. Squeeze in the lime juice, taste, and adjust with a little more salt if needed.

Recipe notes

Tips

  • For a smoother sauce, blend for a full minute, then let it stand for 2 minutes so any bubbles settle before simmering.
  • Keep the simmer gentle once the sauce is blended so it stays bright and does not catch on the base of the pot.
  • If serving vulnerable groups, make sure the chicken is piping hot throughout with no pink at the bone before serving.

Substitutions

  • Replace Chicken thighs with Chicken breast cutlets; simmer for 12 to 15 minutes, just until cooked through, to keep them juicy.
  • Replace Serrano pepper with Jalapeno pepper for a milder heat.
  • Replace Fresh coriander with Fresh flat-leaf parsley for a different herbal note.

Storage

  • Refrigerate up to 3 days
  • Cool quickly, then refrigerate in a sealed container for up to 3 days. Reheat gently in a saucepan over low heat with a splash of chicken stock until piping hot; freeze for up to 3 months and defrost overnight in the fridge before reheating.
