Pasta al Pomodoro Fresco (Spaghetti with Fresh Tomato and Basil)
Why this recipe works
- Fast fresh sauce: The tomatoes are cooked only briefly, keeping the sauce bright while still giving enough juice to coat the pasta.
- Simple ingredients, clear flavour: Garlic-infused olive oil, ripe tomatoes, basil and parmesan each add a distinct layer without making the dish heavy.
- Glossy pasta coating: Tossing the spaghetti with reserved pasta water helps the tomato juices and olive oil cling to the strands.

Ingredient notes
- Use ripe tomatoes: Choose tomatoes that smell fragrant and feel heavy for their size; under-ripe tomatoes will make the sauce taste flat.
- Fresh basil matters: Fresh basil gives the clean herbal finish this dish depends on. Dried basil will not provide the same lift.
- Finish with good olive oil: A final drizzle of extra virgin olive oil adds aroma and rounds out the acidity of the tomatoes.
Texture tips
- Toss, don’t just stir: Toss the spaghetti vigorously in the pan so the pasta water, oil and tomato juices emulsify into a light sauce.
- Keep the pasta al dente: Drain the spaghetti while it still has a little bite, as it will continue softening as it is tossed with the tomatoes.
- Keep the tomatoes fresh: Cook the tomatoes just until they soften and release their juices; overcooking will dull their bright flavour.
Common mistakes
- Browning the garlic: Let the garlic turn fragrant but not coloured. If it starts to darken, add the tomatoes straight away to cool the pan.
- Forgetting the pasta water: Reserve some starchy water before draining the spaghetti; it is what helps the fresh sauce coat the pasta properly.
Authenticity notes
- Fresh Italian simplicity: This is a home-style pomodoro built around good tomatoes, olive oil and basil rather than a long, rich simmered sauce.
- Cheese is optional by preference: Parmesan adds savoury depth, but the dish can also be served without it when the tomatoes and olive oil are especially good.

Instructions
- Bring a large pot of water to the boil and season it with 1.5 tsp of the fine sea salt. Add the spaghetti and cook until al dente, according to the packet timings. Before draining, scoop out about 150 ml of the pasta water.
- While the pasta cooks, warm the extra virgin olive oil in a large frying pan over a medium heat. Thinly slice the garlic and cook for 30 to 60 seconds until fragrant, without letting it colour. Roughly chop the tomatoes and add them to the pan with the black pepper and remaining 0.5 tsp salt.
- Cook the tomatoes for 4 to 6 minutes, stirring, until they soften and release their juices but still taste fresh. Add a splash of the reserved pasta water to loosen into a glossy sauce. Taste and adjust with a little more salt or pepper if needed.
- Drain the spaghetti and add it straight to the pan. Toss vigorously for 1 to 2 minutes, adding more pasta water a little at a time until the sauce coats the strands. Tear in most of the fresh basil and toss again.
- Divide between warm bowls and finish with finely grated parmesan and the remaining basil. Drizzle with a little extra olive oil if you like, and serve immediately.
Recipe notes
Tips
- Keep the garlic pale: if it starts to brown, lower the heat and add the tomatoes straight away to stop it catching.
- Use the pasta water gradually; the starch helps the olive oil and tomato juices emulsify into a silky sauce.
- If serving to anyone vulnerable, ensure the dish is served piping hot and avoid leaving cooked pasta at room temperature for long.
Substitutions
- Replace parmesan with grana-padano-cheese for a slightly milder, less nutty finish.
- Replace spaghetti with linguine for a similar shape that holds the fresh tomato sauce well.
Storage
- Refrigerate up to 2 days
- Cool quickly, then refrigerate in a sealed container for up to 2 days. Reheat gently in a frying pan with a splash of water until piping hot; add a little extra parmesan and basil just before serving.
