Ropa Vieja (Cuban Shredded Beef in Tomato Sauce)
Why this recipe works
- Deep savoury base: Browning the brisket first adds depth, while onions, pepper, garlic, cumin and oregano build a rounded sauce before the long simmer.
- Tender shredded beef: Slow braising gives the brisket enough time to soften fully, making it easy to shred into the tomato sauce.
- Bright finish: Red wine vinegar and green olives cut through the richness of the beef and give the sauce its lively, savoury edge.
- Improves as it rests: The shredded beef holds well in the sauce, making this a strong choice for preparing ahead or reheating later.

Timing notes
- Mostly hands-off cooking: The active work is mainly browning, slicing and shredding; the flavour and tenderness come from the long, gentle simmer.
- Rest before serving: A short rest off the heat helps the shredded beef absorb more sauce before it is served.
Texture tips
- Cook until it shreds easily: If the brisket resists shredding, continue simmering gently until the fibres pull apart without force.
- Reduce after shredding: Simmering uncovered once the beef is back in the pot helps the sauce thicken and cling to the meat.
Make-ahead tips
- Good for cooking ahead: Ropa vieja reheats well, and the sauce continues to season the shredded beef as it sits.
- Freezes well: Cool completely, then freeze in a sealed container. Defrost overnight in the fridge before reheating gently.
- Reheat gently: Warm over low heat with a little beef stock if the sauce has thickened too much.
Authenticity notes
- Cuban-style preparation: This version follows the familiar Cuban approach of braising beef in a tomato-based sauce with peppers, onions, cumin, oregano and bay.
- Traditional serving style: Serve with white rice, black beans or fried plantains to balance the rich, tangy sauce.

Ingredients
Instructions
- Heat the sunflower oil in a Dutch oven over medium-high heat. Pat the brisket dry, then brown it well on both sides, about 4 to 5 minutes per side. Transfer to a plate.
- Reduce the heat to medium. Slice the onion and pepper, then cook in the pot, scraping up any browned bits, until softened and lightly golden, 8 to 10 minutes.
- Crush the garlic and stir it in with the ground cumin and dried oregano. Cook for 1 minute until fragrant.
- Return the brisket to the pot and add the bay leaves, tomato passata and beef stock. Bring to a gentle simmer, then cover and cook on low for 2 hours, turning the brisket once, until very tender.
- Lift the brisket onto a board and shred it with two forks, discarding any large pieces of fat. Return the shredded beef to the sauce and simmer uncovered for 15 to 20 minutes until the sauce thickens and coats the meat.
- Stir in the red wine vinegar and green pitted olives, then simmer for 3 to 5 minutes to bring the flavours together. Remove the bay leaves before serving.
Recipe notes
Tips
- For deeper flavour, brown the brisket in two batches if needed so it sears rather than steams.
- If the sauce reduces too quickly while simmering uncovered, add a small splash of beef stock and keep the heat low.
- This dish is best after a short rest: leave it off the heat for 10 minutes so the beef reabsorbs some sauce before serving.
Substitutions
- Replace Beef brisket with Beef chuck roast for a slightly richer, more marbled result.
- Replace Red wine vinegar with Apple cider vinegar for a softer, fruitier tang.
- Replace Green pepper with Red pepper for a sweeter sauce.
Storage
- Refrigerate up to 4 days
- Cool completely, then refrigerate in a sealed container for up to 4 days. Reheat gently in a saucepan over low heat with a splash of Beef stock until piping hot; freeze for up to 3 months and defrost overnight in the fridge before reheating.
