Tarka Dal with Crispy Fried Onions

Creamy red lentils and a sizzling spiced finish give tarka dal its comforting, recognisable character. The lentils cook down until soft and spoonable, coloured with turmeric and kept simple so the final tarka can do the heavy lifting: ghee infused with cumin, garlic, ginger and dried chilli, poured over just before serving for fragrance and warmth. Crisp-edged fried onions add sweetness and texture, while fresh coriander keeps the bowl lively. Served with steamed rice or chapatis, it makes an easy vegetarian dinner that feels generous without being complicated.

Why this recipe works

  • Naturally creamy: Red lentils break down as they simmer, giving the dal a soft, spoonable texture without needing cream.
  • Fragrant finish: Blooming cumin, garlic, ginger and chilli in hot ghee gives the dal a bold aromatic lift at the end.
  • Crisp contrast: Golden fried onions add sweetness and crunch against the creamy lentils.

Authenticity notes

  • Tempered spice finish: The tarka is a classic South Asian technique where spices and aromatics are briefly fried in hot fat, then poured over the dal for maximum aroma.
  • How it is served: Rice and chapatis are natural pairings, turning the dal into a complete, comforting meal.

Adjust the heat

  • For a milder dal: Leave the dried chilli whole or replace it with a gentler spice such as paprika.
  • For more heat: Break the dried chilli before adding it to the ghee so more warmth infuses into the tarka.

Make-ahead tips

  • Cook the dal base ahead: The lentils can be cooked in advance and reheated gently with a splash of water until loose and piping hot.
  • Freeze the lentils: Freeze the dal base in portions, then make a fresh tarka and fried onions after reheating for the best flavour and texture.

Common mistakes

  • Do not overcook the tarka: Garlic and cumin can turn bitter quickly, so remove the pan from the heat as soon as the garlic is pale golden and fragrant.
  • Watch the thickness: Red lentils continue to thicken as they cook and stand, so loosen the dal gradually with water if it becomes too dense.

  1. Rinse the lentils in a sieve until the water runs mostly clear. Thinly slice the onions, finely grate the ginger, and thinly slice the garlic. Break the dried chilli in half if you want more heat to infuse into the ghee.
  2. Tip the lentils into a saucepan with 900 ml water, the turmeric and 1 tsp of the salt. Bring to the boil, then reduce to a gentle simmer and cook for 18 to 22 minutes, stirring now and then, until the lentils are very soft and creamy. If it thickens too much, add a splash more water to loosen.
  3. While the lentils simmer, heat 2 tbsp of the ghee in a frying pan over medium heat. Add the onions and cook for 12 to 15 minutes, stirring frequently, until deep golden and crisp at the edges. Transfer to a plate and season with the remaining 1 tsp salt.
  4. In the same pan, melt the remaining 2 tbsp ghee over medium heat. Add the cumin, garlic, ginger and dried chilli and cook for 60 to 90 seconds until fragrant and the garlic is just turning pale golden. Take off the heat straight away so the spices do not burn.
  5. Stir most of the coriander through the lentils, then ladle into bowls. Spoon the hot tarka over the top and finish with the crispy onions and the remaining coriander. Serve straight away while the tarka is sizzling.

Serving suggestions

This recipe pairs well with:

Steamed rice Chapatis

Tips

  • For extra-creamy dal, whisk the cooked lentils vigorously for 20 to 30 seconds before serving to break them down further.
  • Keep the tarka moving and take it off the heat as soon as it smells toasted; burnt garlic will make the whole dish bitter.
  • If serving vulnerable groups, ensure the dal is simmered until piping hot throughout before serving.

Substitutions

  • Replace ghee with butter for a similar richness, keeping the heat slightly lower so it does not brown too quickly.
  • Replace dried red chili with 1 tsp hot paprika for a gentler, rounder heat.

Storage

  • Refrigerate up to 3 days
  • Cool, then refrigerate in a sealed container. Reheat in a saucepan over low heat with a splash of water, stirring until piping hot; make a fresh tarka if you want the best flavour and texture. Freeze in portions for up to 2 months and defrost overnight in the fridge before reheating.
