Tandoori Salmon with Cucumber Raita

Tandoori-style salmon brings the familiar flavours of yoghurt-marinated, spice-coated cooking to a quick fish dinner. The yoghurt helps the cumin, coriander, paprika, garlic and ginger cling to the fillets, giving the salmon a gently spiced coating while keeping the flesh moist as it bakes. Cucumber raita is the ideal counterpart: cool, creamy, lightly sharp with lemon and freshened with mint. Served with warm naan and lemon wedges, it feels generous without being heavy, with enough freshness and flexibility for an easy weeknight meal.

Why this recipe works

  • Warm, layered spice: The yoghurt marinade carries garlic, ginger and ground spices evenly over the salmon, giving flavour without needing a long marinating time.
  • Fresh balance: Lemon juice and cucumber raita cut through the richness of the salmon and keep the dish bright.
  • Weeknight-friendly: The salmon bakes quickly while the raita is mixed on the side, so the whole meal comes together efficiently.

Texture tips

  • Keep the salmon moist: Remove the salmon as soon as it flakes at the thickest part; it will continue to cook slightly from residual heat.
  • Drain the cucumber well: Squeeze the grated cucumber before mixing it into the yoghurt so the raita stays thick and creamy.

Ingredient notes

  • Greek yoghurt works best: Its thickness helps the marinade cling to the salmon and gives the raita a fuller texture.
  • Paprika changes the finish: Sweet paprika keeps the flavour rounded and mild; smoked paprika gives a deeper, more charred-style note.

Serving ideas

  • Serve with warm naan: Naan is ideal for scooping up the raita and any spiced yoghurt from the salmon.
  • Finish with lemon: A final squeeze of lemon sharpens the spices and makes the fish taste fresher.

Make-ahead tips

  • Store separately: Keep the cooked salmon and raita in separate airtight containers so the raita stays cold and the fish can be reheated properly.
  • Reheat gently: Warm the salmon on a baking tray at 180°C (355°F) until piping hot, and serve the raita chilled.

  1. Heat the oven to 220°C (430°F) and set a baking tray inside to heat up. In a mixing bowl, stir together most of the greek yogurt (reserve about a third for the raita), finely grated garlic and ginger, ground cumin, ground coriander, sweet paprika, and the juice of half the lemon.
  2. Coat the salmon in the yoghurt marinade, making sure it is well covered. Carefully remove the hot tray, place the salmon on it, then bake for 10 to 14 minutes, until just cooked through and flaking at the thickest part.
  3. While the salmon bakes, make the raita: coarsely grate the cucumber, then squeeze out excess liquid with your hands. Finely chop the mint and stir it into the reserved greek yogurt with the cucumber and a squeeze of the remaining lemon juice to taste.
  4. Warm the naan in the oven for 2 to 3 minutes, just until soft and hot. Serve the salmon with the cucumber raita, with the remaining lemon cut into wedges for squeezing over.

Recipe notes

Tips

  • For the best texture, pull the salmon as soon as it flakes easily but is still moist in the centre; it will carry on cooking slightly as it rests.
  • If serving anyone who is pregnant, elderly, or immunocompromised, use pasteurised greek yogurt and cook the salmon until fully cooked through.

Substitutions

  • Replace sweet paprika with smoked paprika for a deeper, smokier flavour.
  • Replace fresh mint with fresh coriander for a more herbaceous, classic raita-style finish.

Storage

  • Refrigerate up to 2 days
  • Cool the salmon and raita separately, then refrigerate in airtight containers. Reheat the salmon on a baking tray at 180°C (355°F) until piping hot; keep the raita chilled and stir before serving.
