Camarones al Ajillo (Latin-Style Garlic Prawns)
Why this recipe works
- Fast cooking: Prawns cook in minutes, making this a practical dinner with a full-flavoured sauce.
- Aromatic pan sauce: Garlic, chilli, butter, olive oil and wine create a savoury sauce that coats the prawns without needing a long simmer.
- Bright finish: Lime zest and juice cut through the richness of the butter and sharpen the garlicky flavour.
- Built for spooning over rice: The loose pan juices make the dish especially good with plain rice, bread or other simple sides.

Adjust the heat
- For gentler heat: Remove the chilli seeds or use less chilli while keeping the garlic and lime for flavour.
- For more heat: Add extra fresh chilli or a pinch of dried chilli flakes when the garlic goes into the pan.
Ingredient notes
- Choose prepared prawns: Peeled and deveined prawns keep the recipe quick and make the sauce easier to eat with rice.
- Dry the prawns well: Patting the prawns dry before cooking helps them sauté cleanly instead of releasing excess liquid.
Common mistakes
- Do not brown the garlic: Garlic can turn bitter quickly, so cook it only until fragrant before adding the prawns.
- Avoid tough prawns: Take the pan off the heat once the prawns are pink and opaque; they continue to firm slightly in the hot sauce.
Serving ideas
- Serve with rice: Long-grain white rice is ideal for soaking up the garlicky butter, wine and lime juices.
- Finish fresh: Extra parsley and a final squeeze of lime brighten the dish just before serving.

Ingredients
Instructions
- Cook the rice in a saucepan of boiling salted water until tender, about 10–12 minutes. Drain well in a colander, then cover to keep warm.
- While the rice cooks, thinly slice the garlic and finely chop the parsley. Finely chop the red chilli, then zest and juice the lime.
- Pat the prawns dry and season with a pinch of the salt. Heat the olive oil and butter in a large frying pan over a medium heat until the butter foams.
- Add the garlic and chilli and cook for 30–60 seconds, stirring, until fragrant but not browned. Add the prawns and sauté for 2–3 minutes, turning, until pink and just cooked through.
- Pour in the wine and simmer for 1–2 minutes to reduce slightly, scraping up any tasty bits from the pan. Stir in the lime zest and most of the lime juice, then taste and adjust with a little more salt or lime juice if needed.
- Take off the heat and toss through the parsley. Serve immediately with the warm rice, spooning the garlicky juices over the top.
Recipe notes
Tips
- Keep the heat at medium when cooking the garlic so it turns fragrant without browning, which can make the sauce taste bitter.
- If using frozen prawns, defrost fully and pat very dry before cooking so they sauté rather than steam.
- If you are pregnant, elderly, or immunocompromised, make sure the prawns are cooked until fully opaque and piping hot throughout.
Substitutions
- Replace Dry White Wine with the same amount of water plus an extra squeeze of Lime, then simmer briefly to bring the sauce together.
- Replace Butter with Olive oil for a lighter finish, keeping the heat gentle so the garlic does not brown.
Storage
- Refrigerate up to 2 days
- Cool quickly and refrigerate in a sealed container. Reheat the prawns and sauce gently in a frying pan over a low heat with a splash of water until piping hot; avoid overcooking the prawns.
