Hyderabadi Chicken Dum Biryani

Hyderabadi chicken dum biryani is one of India’s most recognisable rice dishes, known for its fragrant layers of basmati, spiced meat and herbs cooked together under a tight seal. In this version, bone-in chicken is marinated with yoghurt, ginger, garlic, chilli and lemon, then finished beneath par-cooked rice so the grains steam gently while absorbing the savoury juices below. Saffron milk, ghee-fried onions, mint, coriander and whole spices give the biryani its rich aroma and distinctive layered finish. It is a generous centrepiece dish, best served hot with plenty of both rice and tender chicken in each portion.

Why this recipe works

  • Sealed dum cooking: Par-cooked basmati and marinated chicken finish together under a tight lid, so the meat stays tender while the rice steams through.
  • Layered aroma: Whole spices, saffron milk, fried onions, mint and coriander build fragrance through the rice without needing a heavy sauce.
  • Distinct grains and tender chicken: Stopping the rice while still firm helps it stay separate after the dum stage, with soft chicken and sweet golden onions in each serving.

Timing notes

  • Marinate for depth: The chicken needs at least 45 minutes in the yoghurt marinade, but a longer chill gives the spices and acidity more time to season the meat.
  • Rice timing matters: Boil the rice only until the outside is tender and the centre is still firm; it will finish cooking during the sealed dum stage.
  • Rest before opening: Leaving the pot covered off the heat for 10 minutes lets the steam settle and makes the layers easier to lift without breaking the grains.

Authenticity notes

  • Hyderabadi style: This version follows the recognisable Hyderabadi approach of layering spiced chicken with basmati rice and finishing it gently under a sealed lid.
  • Dum technique: The tight seal is central to dum biryani, trapping steam so the rice absorbs the chicken juices, saffron aroma and spice fragrance.
  • Classic aromatics: Saffron, ghee, whole spices, mint, coriander and fried onions give the biryani its familiar richness, colour and perfume.

Common mistakes

  • Overcooking the rice early: Fully cooked rice can turn soft once sealed with the chicken. Drain it while the grains still have firmness in the centre.
  • Using too much heat: Keep the final cook very gentle. High heat can scorch the bottom before the chicken has finished steaming.
  • Opening too soon: Opening the pot immediately releases steam and can make the rice more fragile. Resting helps the biryani settle before serving.

Serving ideas

  • Cooling sides: Serve with cucumber raita, sliced cucumber or a simple onion salad to balance the richness of the rice and ghee.
  • Traditional-style accompaniment: A tangy mirchi ka salan or yoghurt-based sauce works well alongside the layered rice without overwhelming the saffron and herbs.
  • Fresh finish: Extra mint, coriander and a few reserved fried onions add freshness and texture just before serving.

  1. In a mixing bowl, combine the yogurt with the ginger and garlic (finely grated), the green chilli (finely sliced), the juice of the lemon, 1 tsp fine sea salt, and the black pepper. Add the chicken and turn well to coat, working the marinade into the pieces. Cover and marinate for at least 45 minutes at room temperature, or refrigerate up to 12 hours.
  2. Rinse the basmati rice in several changes of cold water until the water runs mostly clear, then cover with fresh water and soak for 20 minutes. Meanwhile, warm the whole milk and stir in the saffron, then set aside to infuse. Thinly slice the onions and pick the mint and coriander leaves.
  3. Bring the water to a rolling boil in a large pot and season it with 2 tsp fine sea salt. Drain the rice and boil for 5 to 6 minutes until the grains are just tender on the outside but still firm in the centre. Drain well in a colander and set aside.
  4. Heat the ghee in a large frying pan over medium heat, then add the onions and cook, stirring often, for 18 to 22 minutes until deep golden and sweet. Lift out about two-thirds of the onions for topping, leaving the rest and the ghee in the pan. Keep the reserved onions warm.
  5. Add the cinnamon, cardamom, and bay leaves to the pan and cook for 30 seconds until fragrant. Tip in the marinated chicken and any marinade, then cook for 6 to 8 minutes, turning, until the outside turns opaque and the sauce begins to bubble. Take off the heat.
  6. Spread the chicken and its sauce into an even layer in the pan, then scatter over half the mint and coriander. Spoon the par-cooked rice over the top in an even layer, then drizzle over the saffron milk. Scatter over the remaining mint and coriander, then top with the reserved fried onions.
  7. Cover the pan tightly with a lid; if it is not snug, press a sheet of foil under the lid to seal. Set over the lowest heat and cook for 25 minutes, keeping the heat gentle so the biryani steams rather than fries. Rest off the heat for 10 minutes before opening.
  8. Gently lift and fold the biryani with a wooden spoon to mix the layers without breaking the rice too much. Taste and add a pinch more fine sea salt if needed. Serve hot, making sure each portion gets chicken, rice, and plenty of onions and herbs.

Recipe notes

Tips

  • For the best texture, stop boiling the rice when it is still firm in the centre; it will finish cooking during the dum stage.
  • Keep the heat very low during the sealed cook; if you smell scorching, move the pan off the heat for a minute, then continue on a lower setting.
  • If you are pregnant, elderly, or immunocompromised, use pasteurised yogurt and ensure the chicken is cooked until piping hot throughout.

Substitutions

  • Replace Chicken thighs with Chicken drumsticks for a similar rich result; keep the dum time the same and cook until the meat is tender.
  • Replace Ghee with Unsalted butter for a slightly less nutty flavour.
  • Replace Whole milk with Water for the saffron infusion if needed; the aroma remains, but the finish is less rich.

Storage

  • Refrigerate up to 3 days
  • Cool quickly, then refrigerate in a sealed container for up to 3 days. Reheat covered in a 180°C (355°F) oven for 20 to 25 minutes, or in a saucepan over low heat with a splash of water, until piping hot. Freeze in portions for up to 2 months and defrost overnight in the fridge before reheating.
