Vegetarian Stuffed Peppers with Spiced Rice and Chickpeas
Why this recipe works
- Warm, layered flavour: Cumin, cinnamon, garlic and tomatoes give the rice filling savoury depth without needing a long cook.
- Fresh finish: Lemon juice and zest are added at the end, keeping the flavour bright against the earthy chickpeas and spices.
- Good for leftovers: The baked peppers hold their shape well and can be refrigerated or frozen before adding the yoghurt and herbs.

Texture tips
- For softer peppers: If the tops are colouring before the peppers are fully tender, cover the dish loosely with foil towards the end of baking.
- Avoid a watery filling: Simmer the rice mixture until thick before stuffing, so the peppers bake around a cohesive filling rather than releasing excess liquid.
Ingredient notes
- Choose sturdy peppers: Firm, evenly sized red peppers are easiest to fill and bake more evenly.
- Add lemon at the end: Stirring in the lemon after baking preserves its fresh, sharp flavour and keeps the dish from tasting flat.
- Yoghurt for contrast: Greek yoghurt adds cool creaminess; keep it as a finishing topping rather than baking it with the filling.
Make-ahead tips
- Prepare in advance: Cook the rice and chickpea filling ahead, then stuff and bake the peppers when ready to serve.
- Freeze without toppings: Freeze the baked peppers without yoghurt or parsley for the best texture, then defrost in the fridge before reheating.
- Reheat gently: Warm leftovers in a 180°C (355°F) oven until piping hot, adding the yoghurt and herbs only after reheating.
Serving ideas
- Serve with something fresh: Pair with a crisp cucumber salad, leafy greens or simply dressed vegetables to balance the warm spiced filling.
- Finish brightly: Extra parsley, lemon zest and a spoonful of yoghurt make the peppers feel fresher and more complete.

Ingredients
Instructions
- Heat the oven to 200°C (390°F). Halve the peppers lengthways, remove the seeds and membranes, then sit them cut-side up in a baking dish.
- Finely chop the onion and crush the garlic. Heat the olive oil in a frying pan over medium heat, then cook the onion with a pinch of the salt for 6 to 8 minutes until soft and lightly golden; stir in the garlic for 1 minute.
- Stir in the cumin and cinnamon for 30 seconds until fragrant. Add the rice, canned tomatoes, water, remaining salt and the black pepper, then bring to a gentle simmer.
- Cover and simmer on low for 10 minutes, stirring once or twice, until the rice is nearly tender and the mixture is thick. Drain and rinse the chickpeas, then fold them through and cook for 2 minutes to warm through.
- Spoon the rice and chickpea filling into the pepper halves, pressing it in gently. Pour a splash of water into the base of the dish to help steam the peppers, then bake for 25 to 30 minutes until the peppers are tender and the tops are lightly browned.
- Finely chop the parsley and zest then juice the lemon. Stir most of the lemon juice and a little zest into the filling, then serve warm with Greek yogurt, the parsley, and extra lemon to taste.
Recipe notes
Tips
- If the peppers are browning before they are tender, cover the dish loosely with foil for the final 10 minutes of baking.
- For a brighter finish, add the lemon juice at the end rather than during cooking so it stays fresh and punchy.
- If serving to anyone vulnerable to foodborne illness, use pasteurised Greek yogurt and keep the dish piping hot throughout serving.
Substitutions
- Replace basmati rice with jasmine rice for a slightly softer, more fragrant filling.
- Replace ground cumin with ground coriander for a gentler, citrusy spice profile.
- Replace Greek yogurt with crème fraîche for a richer, less tangy topping.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container. Reheat in a 180°C (355°F) oven for 15 to 20 minutes until piping hot; add the Greek yogurt and parsley after reheating. Freeze the baked peppers without the yogurt and parsley for best texture, then defrost overnight in the fridge before reheating.
