Tandoori Chicken Burrito with Mint Yoghurt
Why this recipe works
- Deeply seasoned chicken: Yoghurt, tandoori masala, ginger, garlic and lemon give the chicken savoury depth, gentle tang and colour as it chars in the pan.
- Cooling contrast: Mint yoghurt and lemon balance the warmth of the spices and keep the burrito fresh rather than heavy.
- Flexible assembly: The chicken, rice, beans and sauce can be prepared as separate components, then wrapped with freshly warmed tortillas when ready to serve.

Adjust the heat
- For a milder burrito: Choose a mild tandoori masala and be generous with the mint yoghurt when assembling.
- For more heat: Use a hotter tandoori masala or add a little chilli to the marinade, then balance with extra lemon and yoghurt to taste.
- Keep the heat balanced: Add the yoghurt sauce after reheating the fillings so it stays cool and creamy against the warm spiced chicken.
Ingredient notes
- Tandoori masala varies: Some blends are saltier or hotter than others, so season the beans, rice and sauce with that in mind.
- Use full-bodied yoghurt: Whole milk yoghurt helps the marinade cling to the chicken and gives the mint sauce a smoother finish.
- Rinse the rice well: Rinsing basmati helps the grains cook up separate, which makes the burrito filling lighter and less sticky.
Common mistakes
- Starting with a cool pan: A properly hot frying pan is key for colour; if the pan is not hot enough, the yoghurt marinade is more likely to steam than char.
- Overcrowding the chicken: Cook in batches if needed so the thighs have enough contact with the pan to brown in spots.
- Assembling too early: Warm and fill the tortillas just before serving so they stay pliable and the yoghurt sauce does not soften them too much.
Make-ahead tips
- Marinate in advance: The chicken can be marinated in the fridge for deeper flavour, then brought back towards room temperature before cooking for better browning.
- Store fillings separately: Keep the cooked chicken, rice, beans, herbs, onion and mint yoghurt in separate airtight containers for the best texture.
- Reheat before wrapping: Warm the chicken, rice and beans with a splash of water until piping hot, then assemble with fresh tortillas and chilled mint yoghurt.

Instructions
- In a mixing bowl, combine most of the yogurt with the tandoori masala, finely grated garlic and ginger, the lemon zest and juice, 1 tsp of the fine sea salt, and the black pepper. Reserve the remaining yogurt for the mint sauce. Add the chicken thighs and turn well to coat.
- Set the chicken aside to marinate while you cook the rice, at least 15 minutes at room temperature. If you have time, chill for up to 24 hours for deeper flavour, then bring back towards room temperature before cooking.
- Rinse the basmati rice until the water runs mostly clear, then add it to a large pot with the water and 0.5 tsp of the fine sea salt. Bring to the boil, cover, then cook on the lowest heat for 10 minutes. Remove from the heat and leave covered for 5 minutes, then fluff with a fork.
- Drain and rinse the canned black beans, then tip into a small pan with a splash of water and a pinch of salt from the remaining fine sea salt. Warm gently for 3 to 5 minutes until hot, then cover to keep warm.
- Finely slice the red onion. Roughly chop the fresh coriander, and finely chop the fresh mint. Stir the mint into the reserved yogurt with a pinch of salt and a squeeze of lemon to taste.
- Heat the olive oil in a large frying pan over medium-high heat. Add the chicken thighs, letting excess marinade drip back into the bowl, and cook for 5 to 7 minutes per side until charred in spots and cooked through. Transfer to a board and rest for 3 minutes, then slice.
- Warm the flour tortillas in a dry frying pan for 20 to 30 seconds per side until pliable. Divide the rice, black beans, sliced chicken, red onion and coriander between the tortillas. Spoon over the mint yogurt sauce, then roll into burritos and serve straight away.
Recipe notes
Tips
- For the best char, make sure the frying pan is properly hot before adding the chicken and avoid moving it for the first few minutes so it can colour.
- If you marinate the chicken for longer than 30 minutes, chill it, then take it out 20 minutes before cooking so it browns rather than steams.
- Food safety: if serving to pregnant people, young children, older adults, or anyone immunocompromised, use pasteurised yogurt and make sure the chicken is cooked until piping hot throughout.
Substitutions
- Replace Chicken thighs with Chicken breast cutlets for a leaner burrito; reduce cooking time and cook just until the chicken is cooked through.
- Replace Flour tortillas with Corn tortillas for a smaller, taco-style wrap; warm them well so they do not crack when folded.
- Replace Whole milk yogurt with Greek yogurt for a thicker marinade and sauce; loosen with a little water if needed.
Storage
- Refrigerate up to 3 days
- Store the cooked chicken, rice, beans, onion, herbs and mint yogurt sauce separately in airtight containers. Reheat chicken, rice and beans in a frying pan with a splash of water until piping hot, then assemble with freshly warmed tortillas; add the mint yogurt sauce after reheating.
