Bavarese alla Vaniglia (Italian Vanilla Bavarian Cream)
Why this recipe works
- Silky set: A cooked vanilla custard gives the dessert a smooth base, while gelatine helps it hold its shape once chilled.
- Gentle sweetness: Caster sugar sweetens the custard without overwhelming the clean flavour of the vanilla and cream.
- Ideal for preparing ahead: The bavarese needs several hours to chill, so it can be made in advance and kept ready for serving.

Timing notes
- Allow enough time to set: A minimum of 3 hours in the fridge is needed for a clean, sliceable set; longer chilling gives a firmer result.
- Cool before folding: Let the custard reach room temperature before adding the whipped cream so the mixture stays airy rather than melting down.
Texture tips
- Strain the custard: Passing the custard through a sieve removes the vanilla pod and any small egg solids for a smoother finish.
- Fold gently: Add the whipped cream in two stages and fold rather than beat, keeping as much air in the mixture as possible.
Common mistakes
- Do not boil the custard: Cook it over low heat and stir constantly; boiling can scramble the yolks and spoil the smooth texture.
- Dissolve the gelatine fully: Whisk the softened gelatine into the warm custard until no streaks or pieces remain, otherwise the set may be uneven.
Ingredient notes
- Vanilla choice: A vanilla bean gives the cleanest flavour and visible seeds, while vanilla extract can be used after straining if needed.
- Use full-fat dairy: Whole milk and double cream provide the richness and structure that make the bavarese smooth rather than watery.

Ingredients
Instructions
- Soak the gelatin sheets in a bowl of cold water for 5 to 10 minutes until fully softened. Meanwhile, pour the milk into a saucepan. Split the vanilla bean, scrape out the seeds, and add both seeds and pod to the milk.
- Warm the vanilla milk over a low to medium heat until steaming and just below a simmer, then take off the heat and leave to infuse for 10 minutes. In a mixing bowl, whisk the egg yolks with the caster sugar until slightly paler. Reheat the milk to steaming, then slowly whisk it into the yolks.
- Return the custard to the saucepan and cook over a low heat, stirring constantly, until it thickens enough to coat the back of a spoon. Do not let it boil. Strain through a sieve into a clean bowl and discard the vanilla pod.
- Lift the gelatin sheets from the water and squeeze out excess water. Whisk the gelatin into the warm custard until completely dissolved. Leave the custard to cool to room temperature, stirring occasionally so it stays smooth.
- Whip the double cream to soft peaks. Fold the whipped cream into the cooled custard in two additions, keeping as much air as possible. Divide between ramekins or glasses.
- Chill for at least 3 hours, or until fully set and cleanly sliceable. Serve cold straight from the ramekins, or briefly dip the bases in warm water and turn out if you used moulds. Keep chilled until serving.
Recipe notes
Tips
- For the smoothest set, let the custard cool to room temperature before folding in the whipped double cream; if it is too warm, the cream will melt and the bavarese will set dense.
- Cook the custard gently and never let it boil, or the egg yolks can curdle; if it starts to thicken quickly, take it off the heat and keep stirring.
- If serving to pregnant people, young children, older adults, or anyone immunocompromised, use pasteurised egg yolk and ensure the custard is cooked until properly thickened.
Substitutions
- Replace the vanilla bean with 2 tsp vanilla extract, whisked into the custard after it is strained and off the heat.
- Replace gelatin sheets with 8 g gelatin powder; bloom it in 40 ml cold water, then whisk into the warm custard until dissolved.
Storage
- Refrigerate up to 3 days
- Keep covered in the fridge and serve well chilled. This dessert does not freeze well as the set can weep and turn grainy after thawing.
