Modern Schnitzel Bowl with Potatoes and Mustard Yoghurt Dressing
Why this recipe works
- Crisp schnitzel coating: Panko breadcrumbs create a lighter, crunchier crust than fine crumbs, especially when pressed firmly onto the pork before frying.
- Richness balanced by acidity: Lemon, Dijon mustard and yoghurt cut through the fried schnitzel and keep the bowl fresh rather than heavy.
- Warm and crunchy contrast: Tender potatoes, crisp salad vegetables and a golden crumb give the bowl a satisfying mix of textures.

Texture tips
- For a crisper crust: Press the panko firmly onto the pork and let the coating settle while the oil heats, so it adheres better in the pan.
- Keep the schnitzel separate: Add the sliced schnitzel just before serving rather than sitting it in the dressing, which softens the crumb.
Common mistakes
- Frying at the wrong heat: If the oil is too cool, the crumb absorbs oil; if it is too hot, the coating browns before the pork is cooked through.
- Overcrowding the pan: Fry in batches if needed so the schnitzel browns briskly instead of steaming.
- Over-thinning the dressing: Add lemon gradually and taste as you go; the dressing should be spoonable and creamy, not watery.
Ingredient notes
- Panko for crunch: Panko gives the schnitzel a rough, airy coating; standard breadcrumbs work too, but produce a finer crust.
- Adjust the sharpness: Use extra lemon if you want the dressing brighter, especially when serving the bowl with richer crème fraîche instead of yoghurt.
- Use fresh dill if possible: Fresh dill suits the yoghurt dressing and crisp salad better than dried, giving a cleaner, greener finish.
Make-ahead tips
- Store the parts separately: Keep the schnitzel, potatoes and dressed salad in separate airtight containers so the crumb stays as crisp as possible.
- Reheat for crunch: Reheat the schnitzel on a baking tray in a 200°C (390°F) oven until piping hot and crisp.
- Best eaten freshly fried: The potatoes and dressing hold well, but schnitzel has the best texture soon after frying.

Instructions
- Put the potatoes in a large pot, cover with cold water, and add 1 tsp of the fine sea salt. Bring to the boil, then simmer for 12 to 15 minutes until a knife slides in easily. Drain well in a colander and let them steam-dry for 2 minutes.
- Meanwhile, thinly slice the cucumber and radishes and put them in a mixing bowl. In a small bowl, whisk together the greek yogurt, dijon mustard, the juice of half the lemon, 0.5 tsp fine sea salt, and the black pepper. Finely chop the fresh dill and stir most of it into the dressing, reserving a little to finish.
- Add half the dressing to the cucumber and radishes and toss until glossy and lightly coated. Taste and add a little more lemon juice if you want it sharper. Set aside while you cook the schnitzel.
- Set up a breading station: plain flour on a plate, the egg beaten in a shallow bowl, and panko breadcrumbs on a second plate. Season the pork schnitzel cuts lightly with a pinch of fine sea salt, then coat each one in flour, dip in egg, and press into the breadcrumbs so they adhere well. Lay them on a plate while you heat the oil.
- Heat the rapeseed oil in a large frying pan over medium-high heat until shimmering. Fry the schnitzels for 2 to 3 minutes per side until deep golden and cooked through, turning once and spooning hot oil over the top as they cook. Transfer to a plate and squeeze over a little lemon juice.
- Divide the warm potatoes between two bowls and spoon over a little of the remaining dressing. Add the cucumber and radish salad alongside. Slice the schnitzel and place on top, then finish with the reserved dill and any extra lemon wedges.
Recipe notes
Tips
- For the best crust, press the panko breadcrumbs firmly onto the pork and avoid moving it in the pan until the underside is properly golden.
- If the oil starts to smoke, lower the heat slightly; the schnitzel should fry briskly but not burn before the pork is cooked through.
- If serving to pregnant people, young children, or anyone immunocompromised, use a pasteurised egg or cook the schnitzel until the coating is deep golden and the pork is piping hot throughout.
Substitutions
- Replace Dijon mustard with whole-grain mustard for a milder heat and a more textured dressing.
- Replace Greek yogurt with crème fraîche for a richer, less tangy dressing.
- Replace panko breadcrumbs with breadcrumbs for a finer, more even coating.
Storage
- Refrigerate up to 2 days
- Store the schnitzel, potatoes, and salad separately in airtight containers. Reheat the schnitzel on a baking tray in a 200°C (390°F) oven for 8 to 10 minutes until piping hot and crisp; the salad is best eaten cold and freshly dressed.
