Fish and Chips (Beer-Battered Fish with Chunky Chips)
Why this recipe works
- Crisp batter and chips: Drying the potatoes and fish properly helps the batter cling and lets the chips fry cleanly rather than steaming.
- Two-stage frying: The chips are first cooked gently until tender, then fried hotter for a crisp, golden exterior.
- Sharpness cuts the richness: Malt vinegar, tartare sauce and lemon add acidity and freshness to balance the fried coating.

Timing notes
- Serve straight away: Fish and chips are at their best as soon as the fish is drained, while the batter is still crisp and the fish is hot.
- Work in stages: Par-fry the chips first, then finish them before frying the fish so both components reach the plate hot.
Texture tips
- Dry everything well: Moisture on the potatoes or fish encourages spluttering and can soften the coating, so pat both thoroughly dry before frying.
- Keep the batter cold: Well-chilled lager helps create a lighter batter that fries up crisp rather than dense.
Common mistakes
- Do not overcrowd the oil: Frying in batches keeps the oil temperature stable and helps the chips and fish colour evenly.
- Use a thermometer: The first chip fry needs 160°C (320°F), while the final chip fry and fish need 190°C (375°F) for the right balance of tenderness and crispness.
Ingredient notes
- Choose firm white fish: Cod or another firm white fish works well because it flakes cleanly while holding its shape in the fryer.
- Balance with vinegar and lemon: Add malt vinegar at the table and use lemon for a fresher, brighter finish.

Ingredients
Instructions
- Peel the potatoes and cut into chunky chips, about 2 cm thick. Rinse under cold water until the water runs clearer, then drain well in a colander. Pat very dry with a clean tea towel.
- Pour the sunflower oil into a large pot to a safe depth and heat to 160°C (320°F), using a thermometer. Fry the chips in 2 batches for 8 to 10 minutes each, until tender but not coloured. Lift out with tongs, drain, and set aside while you cook the fish.
- While the chips are cooling, season the fish all over with 1 tsp of the fine sea salt and the black pepper. Put 2 tbsp of the plain flour onto a plate for dusting, and set aside. Cut the lemon into wedges for serving.
- In a mixing bowl, whisk the remaining plain flour with the baking powder and the remaining 1 tsp fine sea salt. Whisk in the chilled lager beer until you have a smooth batter the consistency of double cream. Let it stand for 5 minutes while you bring the oil up to temperature.
- Increase the oil temperature to 190°C (375°F). Return the chips to the oil and fry for 5 to 7 minutes, until deep golden and crisp; drain well. Keep warm while you fry the fish.
- Bring the oil back to 190°C (375°F). Dust each fish fillet lightly in the reserved flour, then dip into the batter, letting the excess drip back into the bowl. Fry in batches for 4 to 6 minutes, turning once, until the batter is golden and the fish is opaque and flakes easily; drain well.
- Serve the fish and chips straight away with tartar sauce. Offer malt vinegar for sprinkling and lemon wedges on the side. Season lightly with a pinch more salt if needed.
Recipe notes
Tips
- Dry chips and fish thoroughly before frying to reduce spluttering and help the batter crisp.
- Keep the batter cold and the oil hot at 190°C (375°F) for a light, crisp coating that does not soak up oil.
- Food safety: if serving to pregnant people, young children, older adults, or anyone immunocompromised, ensure the fish is cooked until piping hot throughout and flakes easily.
Substitutions
- Replace Lager beer with ale beer for a slightly richer, maltier batter.
- Replace White fish fillet with cod fillet for a classic, flaky result.
- Replace Malt vinegar with white-wine-vinegar for a milder tang.
Storage
- Refrigerate up to 2 days
- Fish and chips are best eaten straight away. Cool leftovers quickly, refrigerate in an airtight container, and reheat on a baking tray in a 220°C (430°F) oven for 10 to 15 minutes until piping hot; the batter will not be quite as crisp as fresh.
