Risotto al Limone e Asparagi (Lemon and Asparagus Risotto)
Why this recipe works
- Naturally creamy texture: Arborio rice releases starch as hot stock is added gradually, giving the risotto its classic creamy consistency without needing cream.
- Bright, balanced finish: Lemon zest and juice cut through the butter and Parmesan, keeping the dish fresh rather than heavy.
- Classic risotto method: Toasting the rice, adding stock in stages and finishing off the heat create a loose, glossy risotto with defined grains.

Timing notes
- Serve immediately: Risotto continues to thicken as it sits, so bring it to the table while it is still loose, glossy and flowing.
- Brief rest before serving: A short rest after adding the butter, Parmesan and lemon helps the finish settle without losing the creamy texture.
Texture tips
- Keep it loose: If the risotto tightens before serving, stir in a little more hot stock until it flows softly across the pan.
- Protect the asparagus: Add the asparagus near the end of cooking, and the tips even later if separated, so they stay bright and just tender.
Ingredient notes
- Use risotto rice: Arborio is well suited here because it releases starch while keeping some bite at the centre of each grain.
- Add lemon to taste: Start with a modest amount of juice, then adjust at the end so the lemon lifts the dish without overpowering the asparagus.
Make-ahead tips
- Reheat gently: Warm leftovers in a saucepan with a splash of water, stirring until creamy again and piping hot throughout.
- Best eaten fresh: The risotto has its best texture straight from the pan; chilled leftovers will be softer and less fluid once reheated.

Ingredients
Instructions
- Pour the vegetable stock into a saucepan and bring it to a gentle simmer, then keep it hot over a low heat. Trim the asparagus and cut it into bite-size pieces, keeping the tips separate if you like. Finely chop the onion.
- Heat the olive oil and half the butter in a large frying pan over a medium heat. Add the onion and a pinch of the salt, then cook for 6 to 8 minutes until soft and translucent, not browned.
- Stir in the arborio rice and cook for 1 to 2 minutes until the grains look slightly translucent at the edges. Add a ladle of hot stock and stir until it is mostly absorbed.
- Continue adding stock a ladle at a time, stirring often and only adding more when the pan looks nearly dry. After about 12 minutes, stir in the asparagus pieces (add the tips in the last 5 minutes if keeping them separate). Cook for a further 6 to 8 minutes, until the rice is al dente and the risotto is creamy and loose.
- Finely grate the lemon zest, then squeeze the juice. Take the pan off the heat and stir in the remaining butter, Parmesan, lemon zest and 1 to 2 tbsp lemon juice, then season with the remaining salt and the black pepper. Rest for 2 minutes, then serve straight away while glossy and flowing.
Recipe notes
Tips
- Keep the stock at a gentle simmer so the risotto stays at a steady temperature and cooks evenly.
- Aim for a loose, flowing texture at the end; if it tightens up, stir in a splash more hot stock just before serving.
- If serving anyone who is pregnant, elderly, or immunocompromised, use a Parmesan that is suitable for them and ensure the risotto is served piping hot.
Substitutions
- Replace Parmesan with Grana padano cheese for a slightly milder, sweeter finish.
- Replace Butter with Extra virgin olive oil for a lighter, dairy-free style finish (the risotto will be less glossy).
- Replace Yellow onion with Shallot for a softer, sweeter base.
Storage
- Refrigerate up to 2 days
- Cool quickly, cover and refrigerate. Reheat gently in a saucepan with a splash of water, stirring until piping hot and creamy again; add a little more lemon juice to refresh if needed.
