Kerala Prawn Moilee (Coconut Curry with Curry Leaves)

Prawn moilee is a gentle coconut-based curry closely associated with Kerala’s coastal cooking, valued for its fragrant sauce rather than heavy heat. Mustard seeds, curry leaves, ginger, garlic, onion and turmeric give the coconut milk a warm, aromatic base, while green chilli adds a clean lift without overpowering the prawns. The seafood is cooked only briefly, so it stays tender and sweet in the silky sauce. Finished with lime, it has a fresh edge that makes it especially good with plain basmati rice for an easy, elegant dinner.

Why this recipe works

  • Fragrant base: Mustard seeds, curry leaves, onion, ginger, garlic and turmeric build a savoury foundation before the coconut milk is added.
  • Silky coconut sauce: A gentle simmer thickens the coconut milk lightly while keeping the curry smooth and delicate.
  • Fast cooking: Prawns cook in just a few minutes, making this curry practical for a weeknight dinner.
  • Fresh finish: Lime juice cuts through the coconut richness and keeps the final dish bright rather than heavy.

Adjust the heat

  • For a gentler curry: Remove the chilli seeds, use less chilli, or leave the chilli whole so it perfumes the sauce without releasing as much heat.
  • For more warmth: Keep the chilli seeds in or add a little extra fresh chilli when cooking the aromatics.
  • Keep the heat rounded: Finish with lime to taste; its acidity sharpens the coconut sauce and keeps the chilli from feeling flat.

Ingredient notes

  • Fresh curry leaves matter: Fresh curry leaves give this curry its distinctive citrusy, aromatic edge. Dried leaves are much less fragrant and will not give the same result.
  • Choose coconut milk by texture: Richer coconut milk gives a fuller, silkier sauce, while lighter coconut milk produces a thinner and more delicate curry.
  • Use good prawns: Raw peeled prawns work best because they cook directly in the sauce and absorb the aromatics without becoming dry.

Common mistakes

  • Cooking the prawns too long: Add the prawns only at the end and stop cooking once they are pink, opaque and piping hot throughout.
  • Boiling the coconut sauce: Keep the curry at a gentle simmer after adding the coconut milk; a hard boil can make the sauce split.
  • Adding lime too early: Squeeze in the lime after the pan comes off the heat so the citrus stays fresh and the sauce remains smooth.

Make-ahead tips

  • Make the sauce first: The coconut sauce can be prepared ahead up to the point before adding the prawns. Reheat it gently, then cook the prawns just before serving.
  • Prepare the aromatics: Slice the onion and grate the garlic and ginger in advance to make the cooking stage faster.
  • Best served freshly cooked: The curry keeps briefly, but the prawns have the best texture when cooked and served straight away.

  1. Thinly slice the yellow onion. Finely grate the garlic and ginger root, and slit the green chili pepper lengthways (leave the seeds in for more heat).
  2. Heat the coconut oil in a large frying pan over medium heat. Add the mustard seeds and cook for 30 to 60 seconds until they start to pop, then add the onion, garlic, ginger, green chilli and fresh curry leaf.
  3. Cook, stirring often, for 6 to 8 minutes until the onion is soft and lightly golden. Stir in the ground turmeric and cook for 30 seconds until fragrant.
  4. Pour in the coconut milk and bring to a gentle simmer. Cook for 5 minutes, stirring occasionally, until the sauce looks slightly thicker and the flavours have melded.
  5. Add the prawns and simmer gently for 2 to 4 minutes, just until pink and opaque. Take the pan off the heat and squeeze in the lime juice to taste.
  6. Rest for 2 minutes so the prawns stay tender and the sauce settles. Serve hot, spooning plenty of the coconut sauce over each portion.

Serving suggestions

This recipe pairs well with:

Basmati rice

Tips

  • Keep the simmer gentle once the coconut milk is in, as a hard boil can make the sauce split.
  • For the most tender result, add the prawns only at the end and stop cooking as soon as they turn opaque.
  • If serving vulnerable groups, use very fresh prawns and cook them until fully opaque and piping hot throughout.

Substitutions

  • Replace Coconut oil with Olive oil for a less coconut-forward base.
  • Replace Green chili pepper with 0.5 tsp Cayenne pepper for a similar heat without fresh chilli.
  • Replace Lime with Lemon for a slightly softer, less aromatic citrus finish.

Storage

  • Refrigerate up to 2 days
  • Cool quickly, then refrigerate in a sealed container. Reheat gently in a saucepan over low heat until piping hot, stirring often; avoid boiling to keep the coconut sauce smooth and the prawns tender.
