Apple and Blackberry Pie

With its buttery shortcrust pastry and vivid autumn fruit filling, apple and blackberry pie is one of the most recognisable British fruit desserts. Firm, tart-sweet apples give the filling structure while blackberries soften into a deep, syrupy juice, sharpened with lemon and lightly warmed by cinnamon. A pastry lid keeps the fruit bubbling underneath and turns golden in the oven, giving each slice the familiar mix of crisp crust, tender apple and jammy berries. It is well suited to making ahead, serving warm after a short rest or at room temperature when the juices have settled.

Why this recipe works

  • Crisp pastry, soft fruit: Cold butter and minimal handling keep the shortcrust pastry tender, while the filling bakes down into a juicy, syrupy layer.
  • Balanced fruit flavour: Lemon sharpens the apples and blackberries so the filling tastes bright rather than simply sweet.
  • Classic pie method: Starting the pie on a hot baking tray encourages the base to set quickly, helping reduce sogginess in a fruit-filled pie.

Timing notes

  • Chill the pastry: The 30-minute chill firms the butter and makes the dough easier to roll, with less shrinkage during baking.
  • Rest before slicing: Leaving the pie to stand for 15 minutes allows the fruit juices to thicken slightly, giving neater slices.

Texture tips

  • For a crisper base: Use the preheated baking tray as directed and bake on the lower shelf so the bottom pastry gets direct heat early on.
  • Manage juicy fruit: If the apples release a lot of liquid, let the filling stand briefly and drain off a little excess before adding it to the pastry case.

Ingredient notes

  • Choose firm apples: Firm, tart-sweet apples hold their shape better than very soft varieties and give the pie a cleaner fruit flavour.
  • Use lemon to balance sweetness: The lemon zest and juice brighten the berries and stop the filling from tasting flat.

Make-ahead tips

  • Make the pastry in advance: The pastry can be prepared ahead and kept chilled until ready to roll, making assembly easier.
  • Reheat gently: Warm slices in a 180°C (355°F) oven until piping hot to refresh the pastry more effectively than microwaving.
  • Freeze baked slices: Cool completely, wrap well and freeze slices; defrost overnight in the fridge before reheating.

  1. Tip the flour into a mixing bowl and stir in the salt and 20 g of the caster sugar. Rub in the cold butter with your fingertips until it looks like fine breadcrumbs with a few pea-sized bits. Add the water a little at a time and bring together into a dough without overworking it.
  2. Divide the dough into two pieces, one slightly larger than the other. Shape into discs, then chill for 30 minutes to firm up. Meanwhile, place a baking tray in the oven and preheat to 200°C (390°F).
  3. Peel, core and slice the apples into a bowl. Add the blackberries, remaining caster sugar, cinnamon, and finely grated lemon zest, then squeeze in 2 tbsp lemon juice. Toss gently until the fruit is evenly coated.
  4. Roll out the larger disc on a lightly floured surface and line a pie dish, leaving a little overhang. Tip in the fruit filling and level it out. Roll out the smaller disc for the lid.
  5. Beat the egg and brush a little around the rim of the pastry base to help it seal. Lay on the lid, press to seal, then trim and crimp the edges. Cut a small cross in the centre for steam to escape, then brush the top with the remaining egg.
  6. Set the pie on the hot baking tray and bake for 20 minutes. Reduce the oven to 180°C (355°F) and bake for a further 35 to 40 minutes, until the pastry is deep golden and the filling is bubbling through the vent. If the edges brown too quickly, cover them loosely with foil.
  7. Leave the pie to stand for 15 minutes before slicing so the juices thicken slightly. Serve warm or at room temperature with the fruit syrupy and the pastry crisp.

Recipe notes

Tips

  • For a crisper base, make sure the baking tray is fully hot before the pie goes in, and bake the pie on the lower shelf of the oven.
  • If your apples are very juicy, toss the fruit and leave it for 5 minutes, then drain off a little liquid before filling the pie to reduce the chance of a soggy base.
  • If you are serving vulnerable groups, use a pasteurised egg for the egg wash.

Substitutions

  • Replace 40 g of the Plain flour with rice flour for a slightly shorter, crumblier pastry.
  • Replace Caster sugar with light brown sugar for a deeper, caramel note in the filling.
  • Replace Ground cinnamon with mixed spice for a more traditional autumn flavour.

Storage

  • Refrigerate up to 3 days
  • Cool completely, then cover and refrigerate. Reheat slices in a 180°C (355°F) oven for 10 to 12 minutes until piping hot, or enjoy at room temperature. Freeze well-wrapped slices for up to 2 months and defrost overnight in the fridge before reheating.
