Tsipoura sto Fourno (Baked Gilt-Head Bream with Fennel)
Why this recipe works
- Aromatic base: Fennel, garlic, lemon and white wine roast together first, creating a fragrant bed for the fish and a light pan sauce.
- Fresh balance: Lemon and dry white wine keep the olive oil-rich juices bright rather than heavy.
- Simple whole-fish method: The fish is baked whole and checked at the thickest point, making the cooking process straightforward and easy to judge.

Timing notes
- Short prep, gentle bake: Most of the work is slicing the fennel, lemon and garlic; the oven does the rest.
- Rest before serving: A brief rest lets the fish finish cooking gently and helps keep the flesh juicy.
- Best served promptly: Whole baked bream is at its best soon after cooking, while the flesh is moist and the fennel is warm in the pan juices.
Ingredient notes
- Choose fresh whole fish: Look for cleaned gilt-head bream with clear eyes, firm flesh and a clean sea aroma.
- Use a dry white wine: A crisp, dry wine keeps the sauce light; avoid sweet wines, which can make the fennel taste heavy.
- Finish with lemon to taste: The lemon wedges are useful at the table, especially if the fish or fennel needs a brighter finish.
Ingredient swaps
- Without wine: Use water instead of dry white wine for a simpler alcohol-free pan sauce.
- Herb variation: Fresh dill can replace parsley for a more pronounced aniseed flavour that suits the fennel.
- Alternative fish: A similar whole white fish, such as sea bass, can be used; check doneness at the thickest part as cooking time may vary.
Serving ideas
- Serve with simple sides: Boiled potatoes, roasted potatoes or a crisp green salad work well with the lemony pan juices.
- Keep the finish fresh: Add the parsley at the end so it stays bright rather than wilting into the hot sauce.
- Wine pairing: A chilled dry white wine with citrus and mineral notes suits the fennel, lemon and delicate fish.

Instructions
- Heat the oven to 200°C (390°F). Trim the fennel and slice it thinly, then slice half the lemon and cut the remaining half into wedges. Thinly slice the garlic.
- Scatter the fennel and sliced garlic in a baking dish, then drizzle with 1 tbsp of the olive oil and season with a pinch of the fine sea salt and black pepper. Pour in the dry white wine and lay the lemon slices over the fennel. Bake for 10 minutes to start softening the fennel.
- Pat the sea bream dry, then season the cavity and skin with the remaining fine sea salt and black pepper. Tuck a lemon wedge into each fish cavity and rub the skin with the remaining olive oil. Nestle the fish on top of the fennel.
- Bake for 18 to 22 minutes, until the flesh is just opaque and flakes easily at the thickest part. If the pan looks dry at any point, spoon some of the winey juices over the fish. Rest for 3 minutes before serving.
- Finely chop the fresh parsley and stir it through the fennel and pan juices. Serve the fish with the fennel and spoon the light sauce over the top, with any remaining lemon wedges for squeezing.

Tips
- For the juiciest result, pull the fish as soon as the thickest part turns opaque; it will carry on cooking slightly as it rests.
- If you are serving someone who is pregnant, elderly, or immunocompromised, make sure the fish is cooked until piping hot throughout.
Substitutions
- Replace Dry White Wine with water for a non-alcoholic pan sauce, keeping the baking time the same.
- Replace Fresh parsley with fresh dill for a more aniseed, coastal finish.
Storage
- Refrigerate up to 2 days
- Cool leftovers quickly, then refrigerate in a sealed container. Reheat gently in a 180°C (355°F) oven until piping hot, or flake the fish cold into salads; avoid overcooking when reheating.
