Latin Stuffed Sweet Potatoes

Soft baked sweet potatoes make a naturally hearty base for a Latin-inspired filling of black beans, sweetcorn, cumin and smoked paprika. The dish brings together the sweetness of the potato, the earthiness of beans and a fresh tomato, red onion, lime and coriander salsa, so each serving feels substantial without being heavy. It is the kind of flexible dinner that works well as a complete plant-based meal or as a generous side, with the filling cooked quickly on the hob while the potatoes roast. The lime and coriander drizzle adds the brightness that keeps the rich, soft potato and saucy beans lively.

Why this recipe works

  • Bright finish: Lime juice and fresh tomato salsa cut through the sweetness of the potatoes and the earthiness of the beans.
  • Simple spice depth: Cumin, garlic and smoked paprika give the bean and corn filling a warm, savoury base without a long simmer.
  • Easy to prep ahead: The potatoes and bean filling store well separately, so the fresh salsa can be added just before serving.

Texture tips

  • Bake until fully soft: The sweet potatoes should give easily when pressed with a tea towel; very large ones may need extra time.
  • Thicken the filling: Stirring a little scooped-out sweet potato into the beans makes the filling neater and more cohesive.

Make-ahead tips

  • Keep the salsa fresh: Store the baked potatoes and bean filling separately from the tomato salsa and lime-coriander drizzle.
  • Reheat before topping: Warm the potatoes and filling in a 180°C (355°F) oven until piping hot, then add the fresh elements.
  • Freeze without salsa: Freeze the baked potatoes and bean filling only; defrost overnight in the fridge before reheating.

Ingredient notes

  • Choose similar-sized potatoes: Sweet potatoes of a similar size will bake more evenly and be easier to fill at the same time.
  • Adjust the lime at the end: Taste the salsa just before serving and add extra lime juice if the filling needs more brightness.
  • Use fresh herbs for the drizzle: Fresh coriander gives the topping a cleaner finish than dried herbs, which can taste muted here.

Serving ideas

  • Add a crisp side: Serve with a simple cabbage slaw or leafy salad to bring crunch alongside the soft potato and beans.
  • Finish with extra richness: Avocado or a dairy-free yoghurt-style topping works well if you want a creamier plate.

  1. Heat the oven to 200°C (390°F). Scrub the sweet potatoes, prick them all over with a fork, rub with 1 tbsp olive oil and set on a baking tray. Bake for 45 to 55 minutes, until very tender when pierced with a knife.
  2. Meanwhile, finely dice the tomato and red onion, then put them in a mixing bowl. Zest the lime into the bowl, then juice half of it over the salsa. Stir in half the fresh coriander and set aside.
  3. Drain and rinse the canned black beans and canned corn. Heat the remaining 1 tbsp olive oil in a saucepan over a medium heat, then cook the garlic for 30 seconds until fragrant. Stir in the ground cumin and smoked paprika, then add the beans and corn with a splash of water and cook for 4 to 6 minutes until hot and lightly saucy.
  4. Finely chop the remaining fresh coriander and mix it with the remaining lime juice. Split the baked sweet potatoes down the centre and gently fluff the insides with a fork. Spoon the bean and corn filling into each potato, top with the tomato salsa, then drizzle with the lime and coriander mix to serve.

Recipe notes

Tips

  • If your sweet potatoes are very large, allow an extra 10 to 15 minutes in the oven; they should feel soft all the way through when squeezed (use a tea towel).
  • For a neater fill, scoop out a little of the sweet potato flesh, stir it into the beans to thicken, then refill the skins.
  • Taste the salsa just before serving and add more lime juice if it needs extra brightness.

Substitutions

  • Replace smoked paprika with ground cumin for a simpler, earthier spice profile.
  • Replace lime with lemon for a slightly softer citrus finish.
  • Replace fresh coriander with fresh basil for a different herby topping.

Storage

  • Refrigerate up to 3 days
  • Cool, then refrigerate the sweet potatoes and bean filling in separate airtight containers for the best texture. Reheat the potatoes and filling in a 180°C (355°F) oven until piping hot; add the salsa and lime and coriander drizzle after reheating. Freeze the baked sweet potatoes and filling (without salsa) for up to 2 months; defrost overnight in the fridge before reheating.
