Prime Rib Roast with Rosemary, Garlic and Beef Gravy

Prime rib roast is the kind of centrepiece beef joint valued for its generous marbling, tender rib-eye meat and dramatic bone-in presentation. Here, the flavour is kept classic: garlic, rosemary, sea salt and black pepper are worked into butter so the outside roasts to a savoury, aromatic crust while the interior stays juicy. The pan drippings are not wasted; they form the base of a simple beef gravy with a glossy texture and deep roasted flavour. A thermometer and a proper rest are key to clean carving and evenly tender slices. Serve with mashed potatoes, roasted vegetables or green beans for a traditional roast dinner.

Why this recipe works

  • Two-stage roasting: Starting the beef in a hot oven helps brown the exterior, while the lower roasting temperature finishes the centre more gently.
  • Herb-rich pan flavour: Rosemary, garlic and butter season the crust, then the browned drippings form the base of a savoury beef gravy.
  • Accurate doneness: Using a thermometer and allowing for carry-over cooking makes it easier to carve beef that is juicy rather than overdone.

Timing notes

  • Take off the chill: Letting the beef stand before roasting helps it cook more evenly from edge to centre.
  • Rest before carving: A generous rest allows the juices to settle, making the slices cleaner and more tender.
  • Serve the gravy hot: Make the gravy while the roast rests so it is glossy, warm and ready as soon as the beef is carved.

Common mistakes

  • Skipping the thermometer: Prime rib can move from medium-rare to overdone quickly, so use the internal temperature rather than relying on time alone.
  • Carving too soon: Cutting straight away releases more juices onto the board instead of keeping them in the meat.
  • Rushing the gravy: Whisk the stock in gradually and simmer until lightly thickened to avoid a thin or lumpy gravy.

Ingredient notes

  • Choose a bone-in roast: The bones help the joint sit steadily in the pan and give the roast a classic presentation for carving.
  • Use fresh rosemary if possible: Fresh rosemary gives a cleaner, more aromatic flavour than dried herbs in the butter rub.
  • For gluten-free gravy: Cornflour works well, but mix it with cold stock before adding it to the pan to help prevent lumps.

Serving ideas

  • Classic sides: Mashed potatoes, roasted vegetables and green beans suit the rich beef and give the plate balance.
  • Serve with extra gravy: The beef gravy is especially useful for spooning over both the sliced roast and starchy sides.

  1. Take the beef out of the fridge 1 hour before cooking so it loses its chill. Heat the oven to 220°C (430°F).
  2. Strip the rosemary leaves from the sprigs and finely chop them. Crush the garlic to a paste with the fine sea salt, then mix with the butter, rosemary and black pepper to make a fragrant rub.
  3. Set the beef in a roasting pan, bone-side down. Rub the butter mixture all over the surface, pressing it into any crevices.
  4. Roast for 20 minutes to brown the outside, then reduce the oven to 160°C (320°F). Continue roasting for 60 to 80 minutes, or until a thermometer reads 52°C (125°F) for rare, 57°C (135°F) for medium-rare, or 60°C (140°F) for medium.
  5. Lift the roast onto a board and rest it loosely covered for 25 to 30 minutes. The temperature will rise a little as it rests and the juices will settle.
  6. Pour off all but about 2 tbsp of fat from the roasting pan, keeping the browned bits and drippings. Set the pan over a low heat (or scrape the drippings into a saucepan), whisk in the plain flour and cook for 1 minute until it smells lightly nutty.
  7. Gradually whisk in the beef stock, scraping up the browned bits as you go. Simmer for 6 to 8 minutes until glossy and lightly thickened, then taste and adjust with a little more fine sea salt and black pepper if needed.
  8. Carve the beef into thick slices, cutting along the bones first if needed. Serve with the hot gravy.

Tips

  • For the best crust, make sure the surface of the beef is dry before rubbing on the butter mixture.
  • Use a thermometer and pull the roast a few degrees early; it will continue cooking as it rests.
  • Food safety: if serving to pregnant people, young children, older adults, or anyone immunocompromised, cook the beef to at least 63°C (145°F) and rest for 3 minutes.

Substitutions

  • Replace Fresh rosemary with fresh thyme for a softer, more floral herb note.
  • Replace Plain flour with cornflour for a gluten-free gravy; whisk it into a little cold Beef stock first, then stir into the pan and simmer until thickened.
  • Replace Unsalted butter with olive oil for a dairy-free rub; brush it on generously before roasting.

Storage

  • Refrigerate up to 3 days
  • Cool leftovers quickly, then refrigerate in a sealed container. Reheat sliced beef in a 160°C (320°F) oven with a splash of beef stock until piping hot; warm the gravy gently in a saucepan, adding a little stock to loosen if needed.
